I had this salad at one of my favorite clean food restaurants and knew that I'd have to make this at home. This salad had what I'd consider so few ingredients, yet it was packed with flavor and not on my usual list of go-to mix-ins. I'm sharing this recipe with you so that you might experience this fall flavor explosion! Enjoy!
- 1/4 cup olive oil
- 1/4 cup maple syrup
- 1/4 cup apple cider vinegar
- 1/2 tsp salt
- 1/4 tsp black pepper
Simply mix together with a fork and store in the refrigerator. This makes about 3/4 cups of dressing. I keep it for approximately one week in a glass jar. If the oil solidifies during storage just allow it to sit on the counter while you make the other mix-ins.
- Arugula, Chopped Kale or Mesculin
- Goat Cheese Crumbles
- Raw Pecans
- Dried Cranberries
- Roasted Sweet Potatoes Cubes (roast at 400 degrees with olive oil, salt, pepper for 20-30 minutes, depending on your cube size)
- Finely Diced Red Onions
