Paleo Orange Shrimp w/ Cauliflower Fried Rice

 

Ingredients

1lb 16/20 shrimp

Sauce

*Note: Fish sauce smells terrible! So terrible that you might have doubts about its ability to make your food taste good. Trust me. This is an important staple in nearly every Asian dish. In fact, I'm almost certain that you'd had it in a prepared dish and enjoyed it! 

Fried Rice

 

Directions

  1. Add all ingredients for the sauce into a mixing bowl and whisk. Set aside.
  2. Heat a 10in skillet on medium high heat
  3. Add sauce and cook for 3 minutes (It'll begin to thicken)
  4. Place shrimp in sauce and cook for approximately 1-2 minutes (shrimp edges should start turning pink)
  5. Remove the skillet from the heat - the warmth of the pan will finish cooking the shrimp while you cook the rice
  6. Heat 2 tbsp of olive oil on medium-high heat
  7. Crack 3 eggs into the pan (it should look like you are making sunny side up eggs)
  8. Add green onions to pan and use a spatula to scramble the eggs and green onions (~1 minute to ensure egg is fully cooked)
  9. Add cauliflower rice to the skillet along with remaining olive oil, fish sauce and coconut aminos
  10. Mix with spatula until rice is tender (~4 minutes)
