BLTs are one of my favorite sandwiches! While I could have made this with some low-carb everything bread, I opted to make this as a salad. This salad was pretty awesome! It had nearly all of the flavors of your traditional BLT, plus the extra creaminess of an avocado and my homemade ranch dressing. This would be great for lunch or dinner!
Salad Base – Spring Mix
- 5 slices of sugarfree bacon (I line my bacon on a cooling rack + baking sheet and bake at 400 for ~15 minutes)
- Red Onions, thinly sliced
- 10 cherry tomatoes, sliced in half
- 1 ripe avocado
- blue cheese crumbles (optional)
- 1/4 cup mayo
- 1/4 cup sour cream
- 1 tbsp lemon juice
- 3 tsp ranch seasoning
Mix all of the ingredients for the dressing and store in a glass container. You will have a little dressing remaining so feel free to use it as a topping in my low carb buffalo chicken pizza recipe!
