Roast the Cauliflower in the Ninja Foodi Air Fryer
Add the cauliflower florets to a large bowl.
Drizzle the cauliflower with the olive oil, herb seasoning, sea salt and black pepper.
Add them to the air fryer basket.
Roast them in the air fryer at 400 degrees for 12-15 minutes.
Make Soup
Save a few pieces of roasted cauliflower for garnish.
Add the remaining roasted cauliflower, broth, mascarpone, and lemon garlic butter sauce to a blender.
Use the soup setting to blend to incorporate. I personally only needed about 40 seconds of the time, but you can check and stop when it’s creamy.
Serve the soup in bowls. Top with garnishes.

Use vegetable broth for vegetarian soup: If you’re a vegetarian or are making cauliflower soup for a vegetarian, you can switch up the chicken broth with vegetable broth.
