A quick, one-pot recipe for the Keto Egg Roll in a Bowl (also called Crack Slaw). Includes tips for what to put in eggroll in a bowl, how to make it, and how to meal prep with this dish.
5Green Onionchopped (save some of the deep green part for a topping)
1/4cupRed Onionchopped
3mini baby bell pepperschopped
10ozshredded cabbage
3habanero peppersoptional
1/2cupsliced baby Bella mushroomsoptional
Instructions
Add ingredients for the sauce to a mixing bowl and whisk. Set aside.
Heat a large skillet to medium-high heat
Add garlic, peppers, green onions, red onions, mushrooms and mini bell peppers to pan. Sauté until tender (~3 minutes)
Add ground meat and cook until browned (~5 minutes)
Pour in sauce and add in the cabbage. Stir and allow the sauce to reduce by about half (~8 minutes). You can stop cooking the dish once the cabbage is tender.
Top with green onions, sriracha, and sesame seeds
Notes
I frequently use whatever vegetables that I have in the fridge when making this dish. Feel free to add more cabbage or other vegetables if you'd like to get in some additional healthy carbs or veggies servings in a delicious way.
