Ingredients

Ground Turkey
or another ground meat like ground chicken and ground beef.

Yellow onion
diced

Garlic
about 1 tbsp minced

Homemade Taco Seasoning
or more to taste. I used a homemade recipe that doesn't have as much salt as some options from the store.

Diced roasted tomatoes
canned with the juice do not drain

Chicken broth
I used 1 cup water mixed with 2 tsp chicken bouillon paste

Olive Oil
avocado oil or other fat for cooking
Optional Toppings
Sour Cream
Pico de Gallo Salsa
Guacamole
or Sliced Avocado
Shredded Cheese

Instructions
Heat the olive oil in a Dutch oven or pot over medium heat.
Add the onions and garlic and sauté until translucent (~3 minutes)
Add the ground turkey meat and cook until browned.
Add the remaining ingredients, stir and allow to simmer for 30 minutes.
Serve the soup in a bowl with toppings like sour cream, pico de gallo, shredded cheese, avocado and cilantro.
