Juicy Air Fryer Chicken Kabobs with marinated chicken breast, bell peppers, and red onion. An easy chicken dinner with lightly browned edges and tender vegetables.
½largeRed Onioncut in half to form “square” pieces
1largeRed Bell Pepperscut into quarters to form “squares” pieces
Instructions
Make the marinade: Add the salt, Italian seasoning, garlic, black pepper, oil, and lemon juice to a large bowl. Whisk to combine.
Marinate the chicken: Pat the chicken dry. Add it to the marinade and toss until evenly coated. Cover and refrigerate for at least 4 hours or overnight.
Preheat the air fryer: Preheat to 400°F for 5 minutes.
Assemble the kabobs: Alternate the chicken, red onion, and bell pepper on the skewers. Leave a little space between the pieces instead of packing them tightly together.
Arrange the kabobs: Place the skewers in the air fryer basket in a single layer. Cook in batches if needed.
Air fry: Cook at 400°F for 10–12 minutes, turning the skewers halfway through, until the chicken is cooked through and lightly browned around the edges.
Notes
Cut evenly: Keep the chicken and vegetables close to 1 inch so they cook at a similar rate.
Don’t overcrowd: Leave a little space between the pieces and keep the skewers in a single layer.
Check your skewers: Make sure they fit comfortably inside your air fryer basket before assembling the kabobs.
Marinate ahead: Four hours gives the chicken plenty of flavor, or you can prep it the night before.
Short on time: Skip the marinade and use about 2 tablespoons of Cajun seasoning, chicken rub, or BBQ seasoning per pound of chicken. Toss with a little oil before assembling. No extra salt is needed.
