This creamy chipotle mayonnaise is smoky, tangy, and mildly spicy. It comes together in just 5 minutes with adobo sauce, lime juice, and simple spices. Use it as a dipping sauce for French fries or spread it on burgers, sandwiches, and wraps.
Add all of your ingredients to a small bowl or jar.
Whisk to combine. Make sure the spices are fully incorporated with the mayo.
If in a bowl, transfer your mayo to a small mason jar or other airtight container and chill in the fridge until you are ready to use it.
Notes
Adobo sauce: Use the sauce from a can of chipotle peppers in adobo. The whole peppers are not needed. Freeze the leftovers in small portions to use in Chipotle Chicken or Slow Cooker Mexican Shredded Chicken.
Adjust the heat: Add more adobo sauce one teaspoon at a time for a spicier mayo.
Lime juice: Fresh lime juice has the brightest flavor, but bottled juice also works.
Storage: Refrigerate in a clean, airtight container for up to one week.
Freezing: Do not freeze the finished mayonnaise because it may separate.
