This Keto Creamed Spinach is a rich, cheesy side dish made without flour or cornstarch. Ready in 15 minutes, it is perfect with steak, holiday roasts, or an easy weeknight dinner.
Heat the butter in a large skillet over medium heat.
Add minced garlic and shallots to the skillet. Saute until they are translucent (~2 minutes).
Turn the pan heat to medium low. Then, add the heavy cream, cream cheese, parmesan cheese, and black pepper to the pan. Use a silicone spatula to incorporate the ingredients. You want the cream cheese fully melted.
Add the spinach to the pan and mix it with the sauce. You want to cook this until it is slightly wilted.
Taste the Creamed Spinach and decide if you'd like to add a pinch of salt (~1/8 tsp). Serve immediately.

Fresh or frozen spinach: Fresh spinach gives you the best texture. For frozen spinach, add it after the shallots and garlic, then sauté until thawed and most of the water has cooked off before adding the dairy.
Adjust the creaminess: Add more spinach for a less saucy dish. For a lighter version, replace some of the heavy cream with chicken broth or reduce the cream cheese and Parmesan.
Season to taste: Parmesan is naturally salty, so taste before adding salt. Onion powder, Italian seasoning, or a pinch of nutmeg can add more flavor.
Storage: Refrigerate leftovers in an airtight container for up to 3–4 days. Reheat gently in the microwave or on the stovetop, adding a splash of cream if needed.
