This easy Keto Gravy Recipe makes smooth, savory low carb gravy without flour or cornstarch. Make it with chicken, turkey, beef, or vegetable broth concentrate, or use pan drippings for extra flavor. Ready in about 15 minutes.
Whisk in the chicken bouillon, seasoning, and butter. Turn the heat to medium-high.
Quickly whisk in the Xanthan Gum and cook for 2 minutes.
Turn off the pot and remove it from the heat. It will continue to thicken as it cools.
Notes
Prevent clumps: Mix the xanthan gum with a little melted butter, pan drippings, warm gravy liquid, or a drop of olive oil before whisking it into the pot.
Start small with xanthan gum: A little goes a long way. The gravy will thicken as it sits, so wait a minute before adding more.
Using broth instead of broth concentrate: If you replace the water and broth concentrate with broth or bone broth, taste and season the gravy as needed. I usually use Poultry Seasoning to taste in place of the salt-free herb blend.
Using pan drippings: Replace some or all of the butter with pan drippings for more flavor. If there are browned bits in the pan, whisk them into the gravy base.
If the gravy gets too thick: Whisk in warm broth or water a little at a time until it loosens.
Make ahead and reheat: Store in an airtight container in the refrigerator for up to 5 days. Reheat gently on the stove, whisking often.
