This keto orange peel shrimp is inspired by P.F. Chang’s, with tender shrimp coated in a sweet and savory orange sauce. Orange extract and a brown sugar substitute give the sauce plenty of citrus flavor while keeping it low carb.
Add the chicken broth, orange extract, garlic, rice vinegar, soy sauce, brown sugar replacement, sesame oil, and ground ginger to a skillet over medium heat. Whisk to combine and bring the sauce to a boil.
Reduce the heat to medium-low. Simmer for 10 minutes to reduce the sauce slightly and bring the flavors together.
Slowly whisk in the xanthan gum. Continue cooking over medium-low heat for 5–10 minutes, or until the sauce thickens enough to coat the shrimp.
Add the raw shrimp to the skillet. Cook for 1–2 minutes per side, just until the shrimp are opaque and cooked through.
Spoon the shrimp and orange sauce over keto fried rice or serve with your favorite low-carb vegetable side.
Notes
Frozen shrimp: Thaw completely and drain well before cooking so extra water doesn’t thin the sauce.
Xanthan gum: Whisk it in gradually. A small amount goes a long way, and the sauce will continue to thicken as it cooks.
Soy sauce: Taste the finished sauce and add up to 1 additional tablespoon of soy sauce or coconut aminos if you want a more savory flavor.
Sesame oil: This is optional, but it adds a deeper toasted sesame flavor.
Don’t overcook the shrimp: Remove the skillet from the heat once the shrimp are opaque and cooked through.
