Marinated Chicken Kabobs are an easy main protein with garlic and herb marinated chicken chunks and vegetables. Cooks in less than 20 minutes after marinating the chicken in a simple marinade without yogurt or honey.
½largeRed Onioncut in half to form “square” pieces
1largeRed Bell Pepperscut into quarters to form “squares” pieces
Instructions
Marinate the Chicken
Add the salt, herb seasoning, garlic, black pepper, olive oil, and lemon juice to a large bowl. Whisk to incorporate.
Pat the chicken pieces dry with a paper towel.
Add the chicken to the bowl, and mix them evenly with the marinade
Cover and marinate for at least 4 hours (ideally overnight).
Air Fry the Chicken Kabobs
Lace the vegetables and chicken pieces onto the skewers. I rotate red onions, chicken, and red peppers until I have about 3 pieces of chicken on the skewer. Avoid stuffing them since it makes the chicken harder to cook. I use about 3 chicken bites per skewer.
Preheat your air fryer to 400 degrees for 5 minutes.
Add the skewers to your air fryer basket in a single layer.
Air Fry at 400 degrees for 10-12 minutes to cook the chicken through.
Notes
Swap the chicken & homemade marinade for marinated chicken breasts from the grocery store. Cut that chicken into chunks and follow the remaining steps.
Marinate overnight for maximum flavor.
Avoid stuffing the chicken onto the kabobs since it makes the chicken harder to cook. I use about 3 chicken bites per skewer.
