These Oven Baked Bone-in Pork Chops are juicy, well seasoned, and finished with garlic-herb butter. I use a preheated cast-iron skillet to give the chops a better seasoned crust as they bake.
Take the chill off the pork: Remove the pork chops from the refrigerator 30 to 40 minutes before cooking.
Preheat the skillet: Place a large cast-iron skillet in the oven. Preheat the oven to 400°F. Once the oven reaches 400°F, leave the skillet inside for another 10 minutes so it gets thoroughly hot.
Season the pork: Pat the pork chops dry. Rub them all over with the oil, then season both sides and the edges with the pork chop seasoning. Press the seasoning onto the pork.
Start the sear: Carefully place the pork chops in the hot skillet, leaving space between them. They should sizzle as soon as they hit the pan.
Bake: Bake for 10 minutes. Flip the chops and continue baking for 5 to 10 minutes, or until the thickest part of the pork reaches about 135°F. Start checking the temperature around 13 minutes total, especially if your chops are closer to 1 inch thick.
Add the garlic-herb butter: Remove the skillet from the oven. Add the butter, garlic, and thyme or rosemary. As the butter melts and foams in the hot pan, spoon it over the pork chops.
Rest: Leave the pork chops in the hot cast-iron skillet for 5 to 10 minutes. Spoon the garlic-herb butter over them a few more times as they rest. Before serving, check that the thickest part of each chop has reached at least 145°F.
Serve: Finish with fresh parsley and spoon the pan butter over the pork chops.
Notes
Use thick pork chops: This recipe was tested with 1 to 1½-inch bone-in chops. Thinner chops will cook faster, so start checking them sooner.
Preheat the cast iron well: The hot skillet helps the seasoning brown onto the pork as it bakes.
Cook by temperature: With the cast-iron method, pull the chops around 135°F and let them finish cooking in the hot skillet. Make sure they reach at least 145°F before serving.
Using a baking sheet or baking dish: Plan on about 5 to 10 extra minutes. Cook the chops to about 140°F before removing them from the oven, then rest until they reach at least 145°F.
