Rotisserie Chicken Seasoning
This rotisserie chicken seasoning is a savory, herb-forward spice blend that helps you recreate classic rotisserie-style chicken at home. Made with paprika, garlic, herbs, and warm spices, it adds deep flavor and beautiful color to whole chickens, chicken thighs, and roasted chicken. Ingredients
- 2 tbsp Smoked Paprika
- 2 tbsp Garlic Powder
- 1 tbsp Onion Powder
- 2 tsp dried thyme
- 2 tsp dried oregano
- 2 tsp Black Pepper ground
- 2 tsp Granular Sweetener I prefer brown sugar since it tastes richer. This is optional, but helps browning
- 1½ tsp White Pepper
- 1 tsp dried rosemary
- 1 tbsp Natural Ancient Sea Salt fine
- 1 tsp celery seeds
- ½ tsp Ground Coriander
- ½ tsp Ground Turmeric
Instructions
- Add all of the ingredients to an airtight container
- Mix the spices until incorporated
- Store for up to 6 months

- Use enough seasoning: Start with about 1–2 tablespoons per pound of chicken and rub it over all sides.
- Pat the chicken dry: Removing surface moisture helps the seasoning stick and improves browning.
- Let it sit before cooking: Allowing the seasoning to rest on the chicken for 30 minutes helps flavor penetrate.

- Use both peppers: Black pepper adds bite while white pepper gives subtle warmth.
