Notes
Annatto creates the signature color: This ingredient gives sazon its bright orange color and mild earthy flavor.
Use mushroom powder for extra umami: It adds deeper savory flavor similar to MSG but from natural ingredients. However, when I can't find this in my local grocery store (sometimes, it's called, "umami seasoning"), I skip it.
Use enough seasoning: Start with about 1 tablespoon per pound of meat, rice, or vegetables.
Season rice dishes early: Adding sazon while cooking rice helps the flavor distribute evenly.
Use it beyond rice: It works well in soups, beans, roasted vegetables, and seafood dishes.
Keep it fresh: For the best flavor, make a new batch every 3–6 months.
