Add the bacon, butter and onions to a large skillet over medium heat and sauté until the bacon is crisp and the onions are sautéed (about 10 minutes).
Mix the bouillon and water and pour it into the skillet with the bacon and onions. Stir it around to deglaze the pan.
Add the green beans, contents of the bacon and onion skillet, and remaining ingredients (you can save the salt and pepper to the end to salt to taste) to the cooking pot.
Cook on high for 4-5 hours (check at 4 hours for desired doneness) or low for 8 hours.
Stir and add remaining seasoning and salt to taste.
Notes
I made this recipe with fresh green beans.
For firmer beans, check at 4 hours on high or 6 hours on low.
Taste before adding extra salt since the bacon, bouillon, and Old Bay are already salty.
Reserve some crisp bacon for topping, if desired.
Using cooked ham: Sauté the onions in butter, then add the ham with the green beans.
Using a ham hock: Give it about a 1-hour head start before adding the green beans.
