These grilled shrimp skewers pair juicy, smoky shrimp with sweet pineapple for a quick summer meal. They marinate in a bright garlic-lemon mixture, then grill in just a few minutes.
Make the shrimp marinade: In a large bowl, combine shrimp, olive oil, garlic, lemon juice, lemon zest, paprika, salt, pepper, and red pepper flakes.
Marinate the shrimp: Add shrimp and toss to coat. Cover and let marinate in the fridge for 15–30 minutes.
Thread the shrimp skewers: Thread shrimp and chopped pineapple onto skewers, piercing through the thick and thin parts so they stay secure.
Grill the shrimp skewers: Preheat your grill (or grill pan) to medium-high heat. Grill shrimp skewers for 2–3 minutes per side, or until opaque and lightly charred.
Sprinkle with fresh parsley and serve with lemon wedges.
Notes
Use large shrimp: I prefer 16/20 or 13/15 shrimp because they stay juicy and are easier to secure on the skewers.
Do not marinate longer than 30 minutes: The lemon juice can begin changing the shrimp’s texture.
Soak wooden skewers: Soak them in water for at least 20 minutes before grilling, or use reusable metal skewers.
Watch for doneness: Remove the shrimp once they are opaque and curled into a loose “C” shape. A tight curl usually means they are overcooked.
Try another seasoning: Replace the smoked paprika, black pepper, and red pepper flakes with Cajun Seasoning, Creole Seasoning, Old Bay Seasoning, or Jerk Seasoning. Since each blend contains a different amount of salt, reduce or omit the separate salt as needed.
No outdoor grill: Cook the skewers on a grill pan over medium-high heat.
