Keto Cream of Mushroom Soup
This Keto Cream of Mushroom Soup is rich, creamy, and full of tender mushrooms. Ready in about 35 minutes, it’s delicious by the bowl or as a low-carb substitute for canned cream of mushroom soup.

Ingredients
Keto Cream of Mushroom Soup Base

Butter

Cremini Mushrooms
I used 8oz whole mushrooms and sliced them

Yellow Onion

Chicken Better than Bouillon

Organic Heavy Whipping Cream

Instructions
Heat a dutch oven or soup pot to medium-high heat
Add the butter, mushrooms, onions, and garlic. Saute until the onions are translucent and the mushrooms have started to brown (about 5 minutes)
Turn the heat to medium-low (so as to not burn the heavy cream).
Stir in the remaining soup ingredients. Be sure that the broth paste has become fully incorporated.
Simmer for 15-20 minutes to allow the flavors to meld together and give the soup a chance to thicken.
Optional:
Use a hand blender to blend about half of the soup or add half of the soup to a regular blender to blend.
Return the blended soup to the pot, stir, and enjoy

Notes
Xanthan gum:
Use 1/4 teaspoon or less. The soup will continue to thicken as it cooks and cools.
Texture:
Blend up to half of the soup for a creamy base while keeping plenty of mushroom pieces.
Mushrooms:
Shiitake mushrooms can replace some or all of the cremini mushrooms. Keep the total amount the same.
Salt:
Taste before adding extra salt since the broth paste already contains salt.
Storage:
Refrigerate in an airtight container for up to 5 days or freeze for up to 4 months.
Reheating:
Warm gently on the stovetop, stirring as it heats to help keep the cream from separating.
