Keto fried rice is a quick, one-pan side dish made with cauliflower rice, eggs, green onion, fish sauce, and coconut aminos for that savory, takeout-style flavor. It’s easy enough for a weeknight and pairs well with shrimp, chicken, salmon, or ribs.
2tbspCoconut Aminosor soy sauce. You can add up to 1 tbsp of extra at the end if you wish.
1/2cupmixed vegetablesfrozen, optional
Instructions
Heat 2 tbsp of olive oil on medium-high heat
Crack 3 eggs into the pan (it should look like you are making sunny side up eggs)
Add green onions to pan and use a spatula to scramble the eggs and green onions (~1 minute to ensure egg is fully cooked)
Add cauliflower rice (and frozen mixed vegetables, if you are using) to the skillet along with remaining olive oil, fish sauce and coconut aminos
Mix with a spatula until rice is tender and all the liquid clears (10 - 12 minutes). Some of the riced cauliflower will look browned and toasted.
Notes
Start with a hot pan: This helps the moisture cook off faster.
Give it time to dry out: Cauliflower rice tastes much better once the pan no longer looks wet.
Let it brown a little: A bit of color adds flavor and helps the dish feel more like fried rice.
Keep add-ins under control: Too much in the pan can trap moisture and soften the texture.
Fish sauce smells strong in the bottle: Don’t let that throw you off. It adds deep savory flavor to dishes like fried rice, and once it cooks into the pan, the finished dish won’t smell like fish sauce.
Cook proteins separately first: If you want to add shrimp, chicken, or pork, cook them ahead and stir them in at the end. For shrimp, my pan seared shrimp is an easy option to make alongside this.
