This Hot Honey Fried Chicken Sandwich is perfect when you want a classic crispy chicken sandwich with a little extra flavor. Serve it with Homemade French Fries in the Air Fryer or Air Fryer Potato Wedges, add Spicy Mayo for more heat, or use Lemon Garlic Aioli to balance the spice.
Why You’ll Love This Fried Chicken Sandwich
- The coating has real crunch: Stirring a little brine into the flour mixture creates small clumps that fry into crispy pieces.
- The chicken stays juicy: Buttermilk and pickle juice help tenderize and season the chicken before breading.
- The hot honey adds the finish: The buttery sweet-spicy drizzle makes the sandwich feel special without needing a complicated sauce.

Ingredients You’ll Need
Here are a few ingredient notes to help you get juicy chicken, a crispy coating, and a balanced hot honey sauce. The exact amounts are in the recipe card below.
Chicken Brine
- Chicken thighs: Boneless, skinless chicken thighs stay juicy and are easier to keep tender when frying. Chicken breast cutlets also work if you prefer white meat.
- Buttermilk: Adds tangy flavor, tenderizes the chicken, and helps the breading cling.
- Pickle juice: Garlic dill pickle juice or hot dill pickle juice both work. It adds acidity and seasons the chicken deeply.
- Water, egg, and salt: Water loosens the brine, egg helps the coating cling, and salt seasons the chicken throughout.
- Onion powder and garlic powder: Adds savory flavor directly to the brine.
Crispy Chicken Breading
- All-purpose flour: The main base for the crunchy coating.
- Cornstarch: Helps lighten the breading so the crust fries up crisp instead of heavy.
- Baking powder: Adds extra texture to the coating.
- Salt, onion powder, garlic powder, smoked paprika, and black pepper: These season the crust so the chicken tastes flavorful before you add the sauce and toppings.
Homemade Hot Honey Sauce
- Honey: The sweet base of the sauce.
- Salted butter: Makes the hot honey glossy, rich, and easy to drizzle.
- Pickled hot pepper brine: Use the juice from pickled hot peppers, pickled jalapeños, or spicy pickles to add heat and tang without making the honey too heavy. For a thicker hot honey, use hot sauce or sriracha like I do in my Hot Honey Chicken Wings.
- Red chili flakes: Adds heat. Leave them in for a spicier sauce or strain them out for a milder finish.
Best Buns, Sauces & Toppings
- Oil for frying: Use a neutral oil with a high smoke point, such as vegetable oil, canola oil, or sunflower oil.
- Buns: Sesame seed buns, plain hamburger buns, and brioche buns all work. Brioche adds a little sweetness, while sesame or plain buns keep the sandwich more classic.
- Sauces and toppings: Pickles, lettuce, vinegar coleslaw, spicy mayo, chipotle mayonnaise, lemon garlic aioli, cheese, or extra hot honey all work with the crispy chicken.
How to Make a Fried Chicken Sandwich
Here’s a quick photo guide for the main steps.
Brine the Chicken
Coat the chicken well in the buttermilk brine, making sure it gets into the folds and crevices. The chicken should look fully covered before it goes into the refrigerator. A longer brine gives you better flavor and tenderness.
Make the Hot Honey
After the chicken brines, simmer the honey, butter, pepper brine, and chili flakes until the butter melts and the sauce comes together. Leave the chili flakes in for more heat, or strain them out for a smoother, milder hot honey.

Make the Crispy Breading
Mix the flour, cornstarch, baking powder, and seasonings until combined. Stir in a little brine until small clumps form throughout the flour mixture. Those clumps turn into extra crispy pieces on the fried chicken.

Coat the Chicken for Extra Crunch
Press each piece of chicken firmly into the breading so the coating gets into every fold. The breading should look textured and craggy instead of smooth.

Fry Until Golden
Fry the chicken in batches so the oil temperature stays steady. The outside should be deep golden and crisp, and the inside should reach 165 degrees F. Move the cooked chicken to a wire rack so the crust stays crisp.
Assemble the Sandwiches
Layer the fried chicken on soft buns with spicy mayo, lettuce, pickles, and homemade hot honey. For smoky heat, use chipotle mayonnaise. For crunch and tang, add vinegar coleslaw. For less heat, use lemon garlic aioli instead.

Tips for Crispy, Juicy Fried Chicken Sandwiches
- Use a thermometer: Check both the oil temperature and the chicken’s internal temperature for the best results.
- Keep the oil steady: A heavy-bottomed pot helps hold heat. If the oil is too cool, the chicken can absorb more oil. If it is too hot, the coating can brown before the inside is cooked.
- Drain on a wire rack: Paper towels can trap steam under the chicken and soften the crust. A rack keeps air moving around the coating.
- Keep cooked chicken warm carefully: If you’re frying in batches, place finished chicken in a low oven while the rest cooks. Keep the oven low so the chicken does not dry out.
- Don’t skip the buttermilk: Buttermilk helps tenderize the chicken and gives the breading something to hold onto.
- Use a quick buttermilk substitute if needed: Stir 1 tablespoon of lemon juice or white vinegar into 1 cup of milk. Let it sit for a few minutes before using.
- Let the clumps happen: The textured flour mixture might look uneven, but those rough pieces help create the crispy bits on the outside of the chicken.

Fried Chicken Sandwich Variations
Use these easy swaps to adjust the sandwich to your taste.
- Use chicken breasts: Boneless, skinless chicken breast cutlets work well. Pound or cut them to an even thickness so they cook evenly.
- Make it spicier: Use hot dill pickle juice in the brine, add cayenne to the breading, keep the chili flakes in the hot honey, and use spicy mayo as your sandwich sauce.
- Make it smoky-spicy: Swap the spicy mayo for chipotle mayonnaise. It adds creamy heat with a deeper smoky flavor.
- Make it milder: Use regular dill pickle juice, strain the chili flakes from the hot honey, and use lemon garlic aioli instead of spicy mayo.
- Use a thicker hot honey: If you want a bolder, saucier drizzle, use the sriracha or hot sauce version from my Hot Honey Chicken Wings. It works well on these sandwiches too, especially if you like more heat.
- Add vinegar coleslaw: Use it as a topping when you want crunch, tang, and freshness with the fried chicken and hot honey.
- Make a low-carb version: Use my Keto Chicken Tenders as the crispy chicken base and serve them on a low-carb bun or lettuce wrap.
What to Serve with Fried Chicken Sandwiches
If you’re turning these sandwiches into a full meal, choose sides based on the kind of plate you want.
- For a classic sandwich shop-style meal, serve them with Homemade French Fries in the Air Fryer or Air Fryer Potato Wedges. Either one gives you that crispy fries-and-sandwich feel without deep frying a second thing.
- For a fresh side or topping, vinegar coleslaw works especially well because the tangy dressing cuts through the rich fried chicken and hot honey. You can serve it on the side or pile it right on the sandwich.
- For a Southern-inspired meal, serve these with cornbread muffins, baked macaroni and cheese, or Southern fried cabbage. The cornbread works well with the hot honey, while the cabbage adds a flavorful vegetable option.

Storage & Reheating
- Store: Keep leftover fried chicken in an airtight container in the refrigerator for up to 3 days. Store the chicken separately from the buns, toppings, and hot honey so the sandwiches do not get soggy.
- Freeze: Freeze the cooked fried chicken pieces for up to 2 months. Let the chicken cool completely first, then place it in a freezer-safe bag or container.
- Reheat: Reheat the chicken in the air fryer or oven until warmed through and crisp. Avoid the microwave if possible because it softens the coating.
FAQs
Yes. Boneless, skinless chicken breast cutlets work well, but they should be cut or pounded to an even thickness. This helps them cook evenly and keeps the sandwich easier to bite into.
At least 2 hours works, but overnight gives the chicken the best flavor and tenderness. The brine gives the buttermilk, pickle juice, and seasonings time to work into the chicken.
Press the chicken firmly into the flour mixture and make sure the coating gets into all the folds and crevices. The textured clumps in the flour mixture also help create a crust that clings better.
Keep the oil around 325 degrees F. This helps the coating get crisp and golden while giving the chicken enough time to cook through.
Pickles, lettuce, spicy mayo, chipotle mayonnaise, vinegar coleslaw, cheese, and hot honey all work well. If you want to cool down the heat, lemon garlic aioli is a great option too.

Instructions
Brine the Chicken
- In a large Ziploc bag, add all your chicken and all your brining ingredients.
- Seal the bag and smush your bag around to mix all the ingredients. Make sure to get in all the crevices of the chicken.
- Place in the fridge for at least 2 hours, but overnight would be best.
Make the Hot honey sauce
- Add all your hot honey sauce ingredients to a small pot and place on medium-high heat.
- Simmer for 3-5 minutes until butter is melted. The longer you cook here, the thicker the sauce will be.
- Once at the desired consistency, remove from heat. If you want your sauce spicier, leave the chili flakes in; if you’re going for a more medium-mild heat, strain your flakes out.
- Cool your honey while you cook your chicken.
Breading
- When ready to cook, add 2-4 inches of oil to the bottom of a large heavy-bottom pot and preheat the oil to 325 degrees.
- Meanwhile, in a large bowl, add your breading ingredients and mix until combined. Take 1/4 cup of your brining liquid and add it to your breading mixture, and stir until you have small clumps throughout. This will add extra crunchy bits to your chicken.
- One at a time, remove chicken from the bag and press into your flour mixture evenly, coating, making sure to get all the crevices. Extra lumps that attach here are good to create crunchy bits.
- Fry the chicken in batches: Add your chicken 2 pieces at a time to your oil and cook for 4-5 minutes, flipping once so both sides are golden brown. Check your internal temperature in each piece until it's reached 165’F (74 °C).
- Allow the chicken to drain on a wire rack
- Assemble your sandwiches: These are delicious on a sesame or plain hamburger bun, or if you like them a bit sweeter, a brioche bun. Use plain or smoky garlic mayo, Lettuce, chicken, and pickles for a traditional sandwich, or mix it up and add your favorite toppings.
