Peruvian Chicken is a bold, flavorful chicken dinner made with a lime-spice marinade and served with Peruvian Green Sauce. The chicken roasts until juicy with crisp skin, and the sauce adds the fresh, creamy finish that makes this main dish feel complete.

If you already make my Baked Bone-In Chicken Thighs, this is another easy way to use that same cut of chicken with a completely different flavor. The lime-spice marinade gives the chicken lots of flavor and helps it bake up juicy with crisp skin. I usually serve it with simple sides like Seasoned Jasmine Rice, Sautéed Green Beans, or Cilantro Lime Cauliflower Rice for an easy dinner.

  • Bone-in, skin-on chicken thighs: This recipe works best with bone-in, skin-on thighs because they stay juicy and give you crisp skin. Try to buy pieces that are close in size so they cook evenly.
  • Olive oil

  • Honey

How to Make Peruvian Chicken

This recipe is simple and mostly hands-off once the chicken is marinating.

Make the Marinade

In a large bowl, whisk together the olive oil, soy sauce, honey, lime zest, lime juice, salt, pepper, garlic powder, onion powder, oregano, cumin, and smoked paprika.

Marinate the Chicken

Add the chicken thighs and toss until fully coated. Cover and refrigerate for at least 1 hour, or overnight for even more flavor.

Bake the Chicken

Preheat the oven to 425°F. Remove the chicken from the marinade and let the extra marinade drip off. Place the chicken on a baking sheet and roast them until it reaches at least 165°F. For even more tender chicken thighs, you can cook them closer to 180°F.

Serve With Peruvian Green Sauce

Let the chicken rest for a few minutes, then serve with Homemade Peruvian Green Sauce.

Alternate Cooking Method for Bone-In, Skin-On Chicken Thighs

If you want a faster way to cook the same cut of chicken, you can use my Air Fryer Chicken Thighs (Bone-in) recipe. That recipe is a helpful option when you want the flavor of Peruvian Chicken but prefer to cook bone-in, skin-on chicken thighs in the air fryer rather than the oven.

  • Use a thermometer: It is the easiest way to know when the chicken is done.
  • Cook thighs past 165°F for better texture: Dark meat is often more tender closer to 175 to 180°F.
  • Serve the sauce on the side: That makes it easy for everyone to add as much as they like.

Ingredients

  • 3 lbs Chicken Thighs, bone-in, skin-on
  • ¼ cup Olive Oil
  • 2 tbsp Soy Sauce
  • 1 tbsp honey
  • 1 Lime, you will need the zest (about 2 teaspoons) and the juice (1 ½ – 2 Tablespoons)
  • 2 tsp Natural Ancient Sea Salt
  • 2 tsp Garlic Powder
  • 1 tsp Black Pepper
  • 1 tsp Onion Powder
  • 1 tsp dried oregano
  • 1 tsp Ground Cumin
  • 1 tsp Smoked Paprika

Instructions

  • In a large bowl, whisk together the olive oil, soy sauce, honey, lime zest and juice, salt, pepper, garlic powder, onion powder, oregano, cumin, and smoked paprika.
  • Add the chicken and toss until it’s completely coated in the sauce.
  • Cover and place in the refrigerator to marinate for at least 1 hour, but preferably overnight.
  • Preheat your oven to 425°F and line a sheet pan with parchment paper if desired.
  • Remove the chicken from the marinade and let the excess marinade drip back into the bowl before placing it onto a baking sheet.
  • Roast the chicken for 30-40 minutes or until the internal temperature reaches at least 165°F (I like mine around 180°F).
