Easy Slow Cooker Boneless Pork Shoulder Roast Recipe [+VIDEO]

There are many reasons I love making this Slow Cooker Boneless Pork Roast recipe. But, the main one is that it’s effortlessly delicious! Thanks to AdapTable Meals, it requires less than 2 minutes of prep and for us, it results in 2 days worth of meals in as little as an hour.

In this post, I’m using a multi-cooker that is both a slow cooker and a pressure cooker. So, I share directions to make this roast in two ways and include some side dishes to make this a meal.

Ingredients in Slow Cooker Pork Roast

Perfect for those busy weeknights and lazy Sunday afternoons when you prefer to spend as little time as possible in the kitchen, this Slow Cooker Pork Roast is made with minimal ingredients. Specifically, it includes:

  • AdapTable Meals Carnitas Roast (you can use any of their roasts for this though)
  • Chicken Bouillon with Water, or Chicken Broth
  • Salted Butter

For this Slow Cooker Pork Roast recipe, I’m using the AdapTable Meals Pork Roast.

The products are available in the meat section. I tend to get a bunch of these at a time and store them in the freezer. This way, I also have a few no-excuses options on-hand when I don’t want to cook.

How to Cook Pork Shoulder Roast

As I mentioned, AdapTable Meals makes this pork shoulder roast easy to cook.

All you have to do is add the roast to your favorite pressure or slow cooker. After that, you add the remaining ingredients. I’m using broth because I prefer to cook with it as to water, but if you don’t have any, it’s ok to add water.

Adding water will make the pork moist and succulent because it will essentially steam the meat to perfection.

How Long to Cook Pork Shoulder Roast in a Slow Cooker

Generally, it can take anywhere between 4-8 hours to cook pork shoulder roast to tender depending on the size of the pork roast. In this case, you only need to cook your roast on high for 4 hours.

If pressure cooking a fresh roast, cook on “High” for 35 minutes.

If you’re cooking a frozen roast, I recommend that you skip slow cooking and only use the pressure cooking function. I cooked my roast from frozen on “High” for 1 hour. 

If you’re pressure cooking, once the clock reaches zero, you can allow the pressure to release normally (~15 minutes) or use the quick release.

Sides Dishes for AdapTable Meals Pork Roast

Depending on which roast you choose, you can serve Boneless Pork Shoulder Roast as protein for my cauliflower rice risotto. You can also pair it with creamed spinach or green beans.

Since I love and am using their carnitas roast, I’ll be having this as part of a burrito bowl. For that, I’ll enjoy this with cilantro lime cauliflower rice, fajita veggies, fresh cilantro, sliced avocado, and diced tomatoes.

Another option would be to use this as part of keto tacos. For that, you can just add the meat to a piece of butter lettuce or one of my easy cheese taco shells.

Easy Slow Cooker Boneless Pork Roast

An easy Ninja Foodi Slow Cooker Boneless Pork Roast recipe that requires less than 2 minutes of prep using AdapTable Meals. Perfect as part of meal prep. Includes pressure cooker directions too!

Ingredients

  • 1.75 lb Adaptable Meals Roast
  • 1 cup warm water, I microwaved mine in a mug for 1 minute. The warm water makes it easier to mix the bouillon.
  • 2 tsp Chicken Better than Bouillon, can also use beef
  • 4 tbsp Butter

Instructions

  • Add the roast to the Ninja Foodi pot
  • Warm your water in the microwave for 1 minute. Then, stir in the bouillon
  • Top the roast with the butter and the bouillon liquid
  • Sit the cooking pot in the Foodi base and twist & lock the pressure cooker lid. Double check that your vent on the lid is turned to "seal"

To Pressure Cook the Roast from Frozen

  • Cook on "High" for 60 minutes (1 hour)
  • Once the clock reaches zero, you can allow the pressure to release normally (~15 minutes). If you’re in a rush, you can release the pressure quickly by turning your vent on the lid from "seal" to "vent".

To Pressure Cook the Roast from Fresh

  • Cook on "High" for 35 minutes.
  • Once the clock reaches zero, you can allow the pressure to release normally (~15 minutes). If you’re in a rush, you can release the pressure quickly by turning your vent on the lid from "seal" to "vent".

To Slow Cook the Roast (from Fresh only)

  • Cook on "High" for 4 hours

To Finish the Roast (Optional)

  • I used the Ninja Foodi to make this roast. So, I switched lids and used the air fryer setting on 400 degrees for 5 minutes to crisp the top layers of the meat.
