Sweet Potato Casserole with Marshmallows has a smooth, creamy center topped with melty, toasted marshmallows that taste like the best part of s’mores. It can use fresh or canned sweet potatoes and is the perfect sweet side that tastes a little like dessert.

Make it for Thanksgiving, Christmas, or another holiday dinner. Add Baked Macaroni and Cheese, Cornbread Casserole, and Turkey Gravy to fill out the rest of your plate.

Ingredients You’ll Need

  • Orange sweet potatoes or yams: Fresh sweet potatoes are my first choice because they have more flavor. Cut them into similar-sized pieces so they cook evenly.
  • Brown sugar: Adds sweetness and a little caramel flavor.
  • Granulated sugar: Sweetens the filling without adding more molasses flavor.
  • Heavy cream: Keeps the filling rich and creamy.
  • Ground cinnamon: Adds warm spice.
  • Ground nutmeg: Adds a little more warmth without overpowering the cinnamon.
  • Salted butter: Adds richness and helps balance the sweetness.
  • Salt: Keeps the filling from tasting flat.
  • Vanilla extract: Adds warmth and works well with the sweet potatoes and spices.
  • Eggs: Bring them to room temperature so they blend in easily. They help the filling set as it bakes.
  • Marshmallows: I use regular marshmallows and arrange them in an even layer over the baked filling.

Equipment

I use a food processor to get the sweet potatoes very smooth and a 9 × 13-inch baking dish for the casserole. A blender (regular or immersion) also works, but you may need to stop and scrape down the sides.

How to Make Sweet Potato Casserole with Marshmallows

Cook the Sweet Potatoes

Peel the sweet potatoes, cut them into 1½ to 2-inch chunks, and boil until fork tender. Drain them well and let some of the steam escape so extra water does not end up in the filling.

Blend Until Smooth

Blend the sweet potatoes with the sugars, cream, butter, vanilla, and spices. Stop when the mixture is smooth with no pieces of potato left.

Taste, Then Add the Eggs

Taste the filling before adding the raw eggs. Once the sweetness and spices are where you want them, blend in the eggs just until combined.

Bake Until Almost Set

Spread the filling into the baking dish. Bake until the edges are set but the middle still has a slight jiggle. It will continue to firm up as it rests.

Toast the Marshmallows

Cover the top with marshmallows, then broil until they puff and turn golden. Stay by the oven because they brown quickly.

Let It Rest

Give the casserole a few minutes to settle before serving. The filling will firm up a little, while the topping stays warm and gooey.

Tips for Creamy Sweet Potatoes and Toasted Marshmallows

  • Cut the potatoes evenly: Similar-sized pieces will become tender around the same time.
  • Drain them well: Too much water can make the filling loose.
  • Add the eggs last: This lets you blend the potatoes completely smooth and taste the filling before the raw eggs go in.
  • Do not overbake it: The center can still have a little movement when you take it out.
  • Watch the broiler: Marshmallows can go from golden to burned very quickly.
  • Use canned puree for a shortcut: I tested this with two cans of sweet potato puree, and it works. I still prefer fresh sweet potatoes because they have more flavor, but canned puree saves you the peeling, chopping, and boiling.

Easy Swaps and Variations

  • Use pumpkin pie spice: Replace the cinnamon and nutmeg with my Pumpkin Pie Spice.
  • Add pecans: Sprinkle chopped pecans over the filling before adding the marshmallows.
  • Use more brown sugar: Replace some of the white sugar with brown sugar for a stronger caramel flavor.
  • Use unsalted butter: Add a little more salt to taste.

What to Serve With Sweet Potato Casserole

Since this is one of the sweeter sides on the holiday plate, I like to serve it with plenty of savory dishes.

  • For Thanksgiving, add Baked Macaroni and Cheese, Browned Butter Mashed Potatoes, Turkey Gravy, and Cornbread Dressing.
  • Cornbread Casserole is another good casserole-style side, while Homemade Cornbread gives you something you can slice and serve with the meal.
  • If you want sweet potatoes with more texture instead of a creamy filling, make Southern Candied Yams.

Make-Ahead and Storage

  • Make ahead: Prepare and bake the sweet potato filling without the marshmallows. Cool and refrigerate it, then reheat and add the topping before serving.
  • Store: Keep leftovers covered in the refrigerator for 3 to 4 days.
  • Reheat: Warm larger portions covered in the oven or heat individual servings in the microwave.
  • Freeze: Freeze the sweet potato filling without the marshmallows for up to 2 months. Thaw it in the refrigerator before reheating.
  • After freezing: Add fresh marshmallows once the casserole is hot, then toast them before serving.

Why do you add eggs to sweet potato casserole?

Eggs help the filling set while keeping it soft and creamy.

Can I use canned sweet potatoes?

Yes. I tested the recipe with two 15 ounce cans of sweet potato puree as well as a 40 ounce can of sweet potato chunks in water (drained), and both options work well. I prefer fresh sweet potatoes because they have more flavor.

Why is my sweet potato casserole runny?

The potatoes may have carried too much water into the filling, or the casserole may need more time to set. Drain fresh sweet potatoes well before blending.

How do I keep the marshmallows from burning?

Add them after the filling has baked, then broil just long enough to toast them. Stay by the oven and watch them closely since it really takes about 1 minute.

Can I make sweet potato casserole the day before?


Yes. Bake the sweet potato base without the topping, cool it, and refrigerate it. Reheat it and add the marshmallows before serving.

Ingredients

  • 3 lbs Sweet Potatoes, orange or yams, washed and scrubbed. See recipe note if you have canned sweet potato chunks or canned sweet potato puree.
  • ¾ cup Brown Sugar
  • ¼ cup Granular Sweetener
  • ½ cup Heavy Cream
  • 1 tsp Ground Cinnamon
  • ½ tsp Ground Nutmeg
  • ¼ cup Butter, salted
  • ¼ tsp Natural Ancient Sea Salt, use DRDAVINAHS to save at checkout
  • 2 tsp Vanilla Extract
  • 3 large Eggs, room temperature

Topping

  • 7 oz Marshmallows, mini or regular, about 4-4.5 cups of marshmallows to form an even layer on top of the casserole.

Instructions

Prepare the Sweet Potato Puree

  • Peel and cut the sweet potatoes: Peel the sweet potatoes and cut them into 1 ½ to 2-inch chunks.
  • Boil the sweet potatoes to fork tender: Add the sweet potato chunks to a large pot and cover them completely with cold water. Cover the pot and bring the water to a boil (use the quick boil setting on your stove if you have it). Reduce the heat to low and simmer for 15-20 minutes, or until a fork can easily slide in and out of the thickest parts of the sweet potatoes.
  • Drain the sweet potatoes well and let the steam evaporate for a minute or two before adding to the food processor.
  • Preheat the oven to 350 degrees

Make the Sweet Potato Casserole

  • Blend the sweet potatoes, sugars, cream, butter & spices: Add the sweet potatoes and other casserole filling ingredients, except the eggs to a food processor or blender. Mix until incorporated. We’re saving the eggs to make sure the sweet potatoes are well blended without cooking the eggs. This also allows us to taste the filling & make adjustments if needed.
  • Taste & adjust then blend in the eggs: Add the eggs and mix until incorporated.
  • Pour the sweet potato casserole filling into a baking dish. I used a 9×13.
  • Bake uncovered until the edges are set: Bake at 350 degrees for 40-45 minutes, or until the edges are set with a slight jiggle in the center
  • Top the casserole with an even layer of marshmallows
  • Broil to lightly toast the marshmallows: Turn the broiler to 425 degrees. If your oven does not have broil temperatures, then you can turn the broiler setting to low. Broil the casserole for about 1 minute to lightly toast the marshmallows without scorching them.
  • Allow to cool for at least 5-10 minutes before serving.

Recipe Notes

  • Drain well: Let the boiled sweet potatoes sit briefly after draining so excess steam and water can escape.
  • Add eggs last: Blend the filling smooth and adjust the sweetness or spices before mixing in the raw eggs.
  • Canned shortcut: I tested this recipe with two types of canned sweet potatoes. Both work well, but I prefer fresh since fresh sweet potatoes have more flavor. If needed, you can replace fresh sweet potatoes with two cans (15 ounces each) of sweet potato puree OR one 40 ounce can of sweet potato chunks (get the one that comes in water, not syrup, rinse and drain well). 
  • Watch the marshmallows: Broil just until puffed and golden. They can burn quickly, so stay near the oven. It only takes about 1 minute. 
  • Make ahead: Bake the sweet potato filling without the marshmallows, refrigerate, then reheat and add the topping before serving.
  • Storage: Refrigerate leftovers for 3 to 4 days.
