This Deviled Eggs Recipe makes a creamy filling that is smooth enough to pipe but thick enough to hold its shape. The sweet relish and pickle juice give it a tangy Southern flavor that your family will enjoy. Sometimes called Angel Eggs, these are an easy appetizer that disappears fast.

Make them for Easter, Thanksgiving, Christmas, BBQs, or potlucks. Serve them with Baked Macaroni and Cheese and Cornbread Muffins, or add them to a larger spread from my Thanksgiving Recipes. For the same creamy, tangy flavor in a larger side dish, try my Deviled Egg Potato Salad. It turns the yolks, mustard, pickle juice, and smoked paprika into a dressing for tender potatoes.

Ingredients You’ll Need

  • Eggs: Use large eggs and cool them completely before peeling.
  • Full-fat mayonnaise: Gives the filling a creamy texture while helping it hold its shape.
  • Dijon mustard: Adds a sharper mustard flavor.
  • Yellow mustard: Gives the filling the familiar taste of classic Southern-style deviled eggs.
  • Sweet pickle relish: Adds sweetness and small pieces of pickle. Drain off any extra liquid before mixing.
  • Dill pickle juice: Adds more tang. Measure it carefully so the filling does not become too loose.
  • Garlic powder and onion powder: Add savory flavor without changing the smooth texture.
  • Smoked paprika: Adds a lightly smoky finish and gives the eggs more color.
  • Coarse black pepper and sea salt: Taste the filling before adding extra salt since several of the other ingredients are already seasoned.
  • Chives: I used freeze-dried chives, but finely chopped fresh chives work too.

How to Make Deviled Eggs

Cook and Cool the Eggs

Cook the eggs until the whites are set and the yolks are fully cooked but still bright yellow. Move them straight into an ice bath to stop the cooking and help prevent a gray ring around the yolks. You can also use my Air Fryer Hard-Boiled Eggs, then cool and peel them the same way.

Peel and Cut

Peel the eggs once they are completely cool, then slice them in half lengthwise. Gently lift out the yolks so the whites stay intact.

Make the Filling

Mash the yolks with the mayonnaise, mustards, relish, pickle juice, and seasonings. The finished filling should look smooth and creamy but still hold its shape on a spoon.

Chill, Fill & Serve

Chill the filling briefly so it firms up, then pipe or spoon it into the egg whites. Finish with smoked paprika and chives just before serving.

Tips for the Best Deviled Eggs

  • Cool the eggs completely: Warm eggs are softer and more likely to tear while you peel them.
  • Mash before mixing: Breaking up the dry yolks first gives you a smoother filling.
  • Watch the texture: Add more pickle juice only a little at a time. The filling should be soft enough to pipe but thick enough to hold its shape.
  • Use a zip-top bag: Add the filling to the bag, snip off one corner, and use it as a simple piping bag.
  • Cook one or two extra eggs: This gives you backup whites in case any tear during peeling. Keep the recipe filling amounts based on the original number of eggs.

Easy Swaps and Variations

  • Use dill relish: Replace the sweet relish with dill relish for a less sweet filling.
  • Use one mustard: Use all Dijon for a sharper flavor or all yellow mustard for a more traditional taste.
  • Add bacon: Top the eggs with finely chopped Air Fryer Bacon.
  • Add some heat: Stir in a little hot sauce or cayenne pepper.
  • Change the herbs: Replace the chives with finely chopped dill or parsley.
  • Skip the piping bag: Spoon the filling into the egg whites when you want a more relaxed look.

What to Serve With Deviled Eggs

  • Store: Refrigerate leftovers in an airtight container for up to three to four days.
  • Serve cold: Deviled eggs do not need to be reheated.
  • Freeze: Do not freeze them. The whites can become rubbery and the filling may separate.

How do I make the filling smooth?

Can I make deviled eggs without relish?

Yes. Leave out the relish and add a small amount of extra pickle juice for tang. Add it gradually so the filling stays thick.

Ingredients

  • 6 large Eggs
  • 3 tbsp Mayonnaise, full fat
  • 1 tsp Dijon mustard
  • ½ tsp Yellow Mustard
  • 1 tbsp Sweet Pickle Relish
  • ½ tsp pickle juice
  • ½ tsp Garlic Powder
  • ½ tsp Smoked Paprika
  • ¼ tsp Onion Powder
  • ¼ tsp Black Pepper, coarse ground
  • ¼ tsp Natural Ancient Sea Salt
  • 1 tsp Dried Chives, I used freeze-dried chives, but fresh chives work too

For garnish

  • Smoked Paprika, a few dashes over the tops
  • Dried Chives, or fresh to sprinkle over the top

Instructions

  • Boil the eggs: Add the eggs to a saucepan and cover with cold water. Bring to a boil, then turn off the heat, cover, and let sit for 10 to 12 minutes.
  • Cool the eggs: Transfer the eggs to an ice bath for about 10 minutes. Peel the eggs once cooled.
  • Cut the eggs in half lengthwise. Separate the egg yolks from the egg whites.
  • For the smoothest filling, use a fork to mash the yolks completely in a small bowl. Then, add the rest of the deviled egg filling ingredients to the bowl.
  • Mash the yolks with mayonnaise, Dijon mustard, yellow mustard, relish, pickle juice, and spices. Mix until smooth and creamy.
  • Chill the filling for 15-20 minutes. This allows it to firm up a bit, making it easier to pipe or spoon into the egg whites. You can also skip this step if you're in a rush.
  • Pipe or spoon the filling back into the egg whites.
  • Garnish: Sprinkle with more smoked paprika and top with more chives.

Recipe Notes

  • For the smoothest filling: Mash the yolks well before adding the wet ingredients to help break up any larger pieces. But, sometimes, I skip this and just add everything to the bowl together and mash until smooth. 
  • Relish: Drain off excess liquid so the filling stays thick enough to pipe.
  • Pickle juice: Add carefully since too much can make the filling loose.
  • Make ahead: Assemble up to 1 day ahead and keep covered in the refrigerator.
  • Storage: Refrigerate leftovers for up to 3 to 4 days. Do not freeze.
