This Honey Mustard Chicken Salad is a filling entrée salad with juicy grilled chicken, creamy avocado, sharp cheddar, crunchy croutons, and a sweet, tangy homemade dressing.

Honey Mustard Chicken

  • Boneless skinless chicken breasts: Use raw chicken breasts that are similar in thickness so they cook at the same rate. Pound the thicker portions slightly if needed.
  • Dijon mustard: Adds a sharper, more savory mustard flavor than yellow mustard.
  • Honey: Balances the Dijon and helps the chicken develop lightly caramelized edges.
  • Olive oil: Adds moisture and helps prevent the chicken from sticking to the grill.
  • Apple cider vinegar: Brightens the marinade so it does not taste overly sweet.
  • Fresh garlic: Minced garlic gives the chicken more flavor as it marinates.
  • Paprika, salt, and black pepper: Season the chicken and add color without overpowering the honey mustard.

This marinade was made specifically for this salad, but my all-purpose Chicken Marinade is a helpful option when you want one marinade that works across several chicken recipes.

Salad

  • Shredded lettuce: Iceberg gives the salad plenty of crunch. Chopped romaine is another sturdy option that holds up well under the chicken and dressing.
  • Cherry tomatoes: Halve them so they are easier to eat and spread evenly throughout the salad.
  • Avocado: Add it just before serving so it stays fresh and keeps its shape.
  • English cucumber: Its thin skin and small seeds mean you do not need to peel it.
  • Red onion: Slice it thinly so it adds sharpness without overpowering the other ingredients. Pickled Red Onions would also work well here.
  • Sharp cheddar cheese: Its salty, savory flavor balances the sweet honey mustard.
  • Croutons: Add these just before serving so they stay crisp. Homemade Air Fryer Croutons would be especially good on this salad.

Honey Mustard Dressing

  • Mayonnaise: Creates the creamy base of the dressing.
  • Dijon mustard: Adds tang and keeps the dressing from tasting too sweet.
  • Honey: Balances the mustard and vinegar.
  • Apple cider vinegar: Adds acidity and lightens the mayonnaise-based dressing.
  • Olive oil: Helps the dressing coat the lettuce more easily.
  • Water: Add a small splash only if you need to thin the dressing.
  • Garlic powder, salt, and black pepper: Add savory flavor and season the dressing to taste.

How to Make Honey Mustard Chicken Salad

Marinate the Chicken

Whisk the marinade until smooth, then turn the chicken until every side is coated. Refrigerate for at least 30 minutes or up to 8 hours.

Grill the Chicken

Grill over medium-high heat until the outside has caramelized edges and the thickest part reaches 165°F. Lower the heat if the honey starts browning too quickly.

Make the Dressing

Whisk the dressing until smooth and pourable. Add honey if it tastes too sharp, vinegar if it is too sweet, or a splash of water if it is too thick.

Let the chicken rest for 5 minutes so the juices stay inside, then slice it across the grain.

Assemble the Salad

Layer the lettuce, tomatoes, cucumber, red onion, cheddar, sliced chicken, and avocado. Add the croutons and dressing just before serving so the salad stays crisp.

Tips for a Crisp, Flavorful Salad

  • Start with dry lettuce: Water left on the greens dilutes the dressing and can collect at the bottom of the bowl. Often, I use a salad spinner when I’m washing my own lettuce.
  • Let the chicken cool slightly: Warm chicken works well, but placing it directly from the grill onto the lettuce can wilt the greens.
  • Dress only what you plan to eat: Once dressed, the lettuce and croutons will gradually soften.
  • Add the avocado last: This keeps the slices intact instead of mashing them into the other ingredients.
  • Keep the textures balanced: The cheddar, avocado, and croutons add the salty, creamy, and crunchy elements that make this feel like a complete salad rather than chicken over lettuce.

Easy Swaps and Add-Ins

  • Chicken thighs: Use boneless skinless chicken thighs for richer flavor and especially juicy meat.
  • Chicken tenders: These marinate and cook more quickly than full chicken breasts.
  • Air-fried chicken: Use my Air Fryer Chicken Breast when you do not want to heat the grill. Brush it with some of the dressing after cooking to bring in the honey mustard flavor.
  • Different greens: Replace the iceberg with chopped romaine, spinach, mixed greens, or a combination.
  • More vegetables: Add shredded carrots, sliced bell peppers, corn, celery, or radishes.
  • Crispy bacon: Top the salad with chopped Air Fryer Bacon for a smoky, savory bite.
  • Different cheese: Swap the cheddar for crumbled feta, goat cheese, or blue cheese.
  • Without croutons: Leave them off or use toasted pecans, almonds, sunflower seeds, or another crunchy topping.

What to Serve With Honey Mustard Chicken Salad

This honey mustard chicken avocado salad is already a complete meal, so it does not need much on the side.

For a larger dinner, pair it with Sautéed Asparagus, a light soup, or Cucumber Tomato Salad. You can also serve extra croutons and honey mustard dressing at the table. Sometimes, I also enjoy dinner salads with a slice of cornbread.

  • Keep it crisp: Store the croutons at room temperature in an airtight container. Add the dressing, croutons, and avocado just before serving.
  • Avocado: Slice it when you are ready to eat for the best color and texture.
  • Freeze: Freeze the grilled chicken for up to 2 months. Do not freeze the assembled salad or creamy dressing.

Can I use the chicken marinade as salad dressing?

Do not use marinade that has touched raw chicken as dressing. Make the dressing separately (like I do in this recipe), or reserve part of the freshly mixed marinade before adding the chicken.

Can I cook the chicken without a grill?

Yes. Heat a lightly oiled skillet over medium heat and cook the chicken until browned on both sides and the thickest part reaches 165°F. Lower the heat if the honey begins to darken too quickly.

Can I serve honey mustard chicken salad cold?

Yes. The chicken can be served warm, at room temperature, or chilled. Cold sliced chicken makes this salad especially convenient for packed lunches and meal prep.

Ingredients

Honey Mustard Chicken Marinade

  • 1 ½ lbs Chicken Breasts, raw, boneless and skinless
  • 3 tbsp Dijon mustard
  • 2 tbsp honey
  • 2 tbsp Olive Oil
  • 1 tbsp Apple Cider Vinegar
  • 2 cloves Garlic, minced
  • 1 tsp Smoked Paprika
  • ¾ tsp Natural Ancient Sea Salt
  • ½ tsp Black Pepper

For the salad

  • 4 cups Lettuce, shredded, romaine lettuce or iceberg lettuce
  • 1 cup cherry tomatoes, halved
  • 1 large avocado, sliced
  • 1 English cucumber, sliced
  • ¼ small Red Onion, thinly sliced
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Croutons

For the honey mustard dressing

  • ¼ cup Mayonnaise
  • 2 tbsp Dijon mustard
  • 1 ½ tbsp honey
  • 1 tbsp Apple Cider Vinegar
  • 1 tbsp Olive Oil
  • 1 tbsp Water, as needed for consistency
  • ¼ tsp Garlic Powder
  • Salt and black pepper, to taste

Instructions

  • Make the marinade: In a bowl, whisk together the marinade ingredients.
  • Marinate the chicken: Add the chicken and toss to coat well. Marinate for at least 30 minutes or up to 8 hours.
  • Preheat a grill pan or outdoor grill over medium-high heat.
  • Grill the chicken for 5 to 7 minutes per side, or until cooked through and lightly caramelized. Let rest for 5 minutes before slicing.
  • Add the dressing ingredients to a bowl
  • Whisk the dressing ingredients until smooth. Add a splash of water if needed to thin it slightly.
  • Slice the chicken
  • Build the salad & serve: In a large serving bowl, combine the lettuce, tomatoes, cucumber, red onion, cheddar cheese, and croutons.
  • Top with sliced grilled chicken and avocado. Drizzle generously with honey mustard dressing and serve immediately.
