This Lemon Orzo Pasta is a risotto-style creamy and lemony side dish recipe, with tender orzo, plenty of Parmesan, and crispy capers adding a salty crunch to every bite.

Ingredients You’ll Need

Here are some notes about the ingredients you’ll need to make creamy lemon orzo pasta. Find the exact amounts in the recipe card at the bottom of the post.

For the Lemon Orzo

  • Orzo pasta: Orzo is a small, rice-shaped pasta. Instead of boiling it separately, you will cook it directly in the skillet while gradually adding broth.
  • Lemons: Zest the lemons before juicing them. Add the zest and juice after cooking so the lemon flavor stays fresh.
  • Parmigiano-Reggiano: Freshly grated cheese melts more smoothly than pre-shredded cheese.
  • Unsalted butter: Keep the butter cold and cut it into cubes. Adding it after removing the skillet from the heat helps give the sauce a smooth, glossy finish.
  • Heavy cream: The cream makes the orzo richer, but the finished pasta should still look loose rather than thick and stiff.
  • Yellow onion: Mince it finely so it softens into the sauce.
  • Garlic cloves: Freshly minced garlic adds savory flavor without overpowering the lemon.
  • Dry white wine: Use an inexpensive dry white wine that you would drink. I usually buy the cheapest bottle at the store. Avoid cooking wine because it does not add the same flavor and is often much saltier.
  • Vegetable or chicken broth: Keep the broth warm so the orzo continues cooking evenly each time you add more.
  • Extra-virgin olive oil: Use it to cook the onion and toast the capers.
  • Fresh thyme: Add whole sprigs while the orzo cooks, then remove them before finishing the pasta.
  • Salt, white pepper, and nutmeg: Season after adding the cheese and capers, since both are already salty.
  • Fresh basil and chives: Add these just before serving for a fresh finish.

For the Crispy Capers

  • Capers: Drain, rinse, and dry them very well. Wet capers cause the oil to splatter and do not crisp as easily.
  • Extra-virgin olive oil: Add enough to coat the bottom of the frying pan so the capers cook evenly.

Equipment

I made the orzo in a large 12-inch enameled cast iron skillet. The wide base helps the broth absorb evenly, while the deeper sides give you enough room to stir in the cream, butter, Parmesan, and lemon without spilling. I toasted the capers separately in a small frying pan so they could sit in a single layer and crisp evenly.

How to Make Lemon Orzo Pasta

Soften the Onion

Cook the onion in olive oil until completely soft and translucent. Add the garlic and thyme once the onion is tender, then cook just until the garlic smells fragrant.

Toast the Orzo

Stir the dry orzo into the skillet and cook until it smells lightly nutty. It may turn slightly golden, but it should not become deeply browned.

Add the Wine and Broth

Let the wine cook down until the skillet is nearly dry. Add the warm broth a few ladles at a time, stirring often and waiting until most of it is absorbed before adding more.

Cook Until Creamy

Continue adding broth until the orzo is tender with a slight bite. The sauce should still look loose because it will thicken as it sits.

Crisp the Capers

Toast the well-dried capers in a separate frying pan so they can sit in a single layer. Let them cook without stirring at first, then gently shake the pan until they open slightly and turn golden and crisp.

Finish the Orzo

Stir in the cream over low heat, then remove the skillet from the heat. Add the cold butter, lemon juice, lemon zest, and Parmesan, and stir until the sauce looks smooth and glossy.

Season the orzo, then top it with the crispy capers, basil, chives, extra Parmesan, and a small drizzle of the oil used to cook the capers.

How to Keep Lemon Orzo Creamy, Not Mushy

  • Use a wide skillet with some depth: A 12-inch skillet gives the broth room to absorb evenly and makes it easier to stir everything together at the end.
  • Keep the broth warm: Cold broth cools the skillet and slows down the cooking process.
  • Add the broth gradually: This helps the orzo release its starch and lets you stop adding liquid once the pasta is tender.
  • Stir often, not constantly: Frequent stirring creates creaminess without breaking down the pasta too much.
  • Stop while the sauce still looks loose: The orzo continues absorbing liquid after cooking and will thicken before it reaches the table.
  • Add the lemon at the end: Cooking the lemon juice for too long can dull its fresh flavor.
  • Serve it soon: If the orzo thickens before serving, stir in a splash of warm broth or cream.

Easy Swaps and Add-Ins

  • Without wine: Replace the white wine with the same amount of vegetable or chicken broth.
  • Vegetarian option: Use vegetable broth and a Parmesan-style cheese made without animal rennet.
  • Different cheese: Replace some or all of the Parmesan with Pecorino Romano. It is saltier, so taste before adding more salt.
  • Add vegetables: Stir in peas, baby spinach, or chopped asparagus near the end of cooking.
  • Without capers: Leave them off or add toasted breadcrumbs for a different crunchy topping.
  • Change the herbs: Use parsley or dill instead of basil and chives.
  • Make it a main dish: Add sliced Air Fryer Chicken Breast, shrimp, salmon, or steak over the finished orzo.

What to Serve With Lemon Orzo Pasta

This creamy lemon orzo recipe works best with simply seasoned meats, seafood, and vegetables. Serve it with Pan Seared Steak when you want a richer dinner, or add Pan Seared Shrimp for a quicker seafood meal. For vegetables, try Baked Asparagus or a fresh Cucumber Onion Salad. Both add something lighter alongside the creamy pasta.

Make-Ahead and Storage

  • Make ahead: Grate the cheese, chop the herbs, zest and juice the lemons, and prepare the capers in advance. Cook the orzo close to serving time for the best texture.
  • Store: Refrigerate leftover lemon orzo in an airtight container for 3 to 4 days.
  • Keep the capers crisp: Store leftover crispy capers separately and add them after reheating the pasta.
  • Reheat: Warm the orzo gently over low heat with a splash of broth or cream. You can also microwave it in short intervals, stirring between each one.
  • Freeze: Freezing is not recommended because the orzo may become too soft and the cream sauce can separate.

Is orzo rice or pasta?

Orzo looks similar to rice, but it is a small pasta made from wheat.

Can you cook orzo like risotto?

Why did my orzo turn mushy?

Ingredients

  • 1 cup Orzo Pasta
  • 3 Lemons, 2 zested and juiced, 1 sliced for garnish
  • ½ cup Parmigiano-Reggiano, freshly grated, plus extra to serve
  • ¼ cup Butter, unsalted, cold and cubed
  • ½ cup heavy cream
  • 1 small Yellow Onion, finely minced
  • 4 cloves Garlic, minced
  • 1 cup Dry White Wine, get an inexpensive one that you could drink like Pinot Grigio
  • 2 cups Vegetable Broth, warmed, or chicken broth
  • 3 tbsp Olive Oil, or avocado oil
  • 3 sprigs Thyme, fresh
  • 1 tsp Natural Ancient Sea Salt
  • ½ tsp White Pepper
  • ¼ tsp Ground Nutmeg, or freshly grated
  • 3 tbsp Basil Leaves, fresh, torn
  • 2 tbsp Chives, fresh, finely chopped

Capers topping

  • 4 tbsp Capers, drained and rinsed thoroughly
  • 3 tbsp Olive Oil

Instructions

  • Sauté the onions in olive oil: Heat 3 tablespoons olive oil in a wide, heavy-bottomed pan over medium heat. Add 1 yellow onion, finely minced and cook gently for 5 minutes until completely soft and translucent.
  • Add the garlic and thyme & cook until fragrant: Add the minced garlic cloves and fresh thyme sprigs and cook 1 minute more until fragrant.
  • Toast the orzo: Add orzo pasta directly to the pan and stir constantly for 2 minutes over medium-high heat until the orzo is lightly toasted and smells nutty.
  • Add the wine: Pour in 1 cups dry white wine and stir vigorously. Let it absorb completely, about 2 minutes, until the alcohol smell cooks off and the pan is nearly dry.
  • Add vegetable or chicken broth two ladles at a time, stirring frequently and letting each addition absorb before adding the next, exactly like a risotto. Remove thyme sprigs after the first few ladles. Continue until the orzo is al dente and the mixture is thick and creamy. This takes about 10–12 minutes total.
  • Toast the capers and set aside: In the meantime, drain and pat dry the capers. Then, take a small skillet and heat 3 tbsp of olive oil. Add the capers in a single layer; they should sizzle immediately and vigorously. Do not stir for the first 60 seconds. Then shake the pan gently and fry for a further 2 to 3 minutes until they have opened up like little flowers and turned deep golden and crisp.
  • Remove the capers with a slotted spoon onto a paper towel. They will continue crisping as they cool. The reserved caper-infused oil is incredible when drizzled over the finished dish.
  • Add the cream once the orzo is thick and creamy: Reduce the heat to low. Pour in heavy cream and stir gently for 2 minutes until it reduces slightly and coats the orzo in a silky layer.
  • Stir in the butter, lemon juice and zest, and cheese: Remove from heat. Add the zest and juice of 2 lemons, unsalted butter, and Parmigiano-Reggiano, all at once. Stir vigorously for 90 seconds so that the cold butter emulsifies into the cream and starch, creating a glossy, cohesive sauce that clings to every grain.
  • Season with salt, white pepper, & nutmeg. Finish with capers & herbs
  • Spoon into warm shallow bowls. Garnish with fresh basil leaves, the crispy capers, fresh chives, extra Parmigiano, a lemon slice and a drizzle of leftover caper oil. Serve immediately.
