These buffalo chicken bowls are bold, satisfying, and easy to make for lunch or dinner. They start with tender buffalo chicken, then get layered with rice or greens, crisp vegetables, and a drizzle of Ranch Dressing or Blue Cheese Dressing for a meal that feels fresh, filling, and easy to make your own.

Flavorful buffalo chicken bowl served with warm rice and colorful veggies

If you already love buffalo chicken recipes, this is an easy way to turn those same flavors into a full meal. You can make the chicken right in a skillet, or use the same idea with Air Fryer Buffalo Chicken, Instant Pot Buffalo Chicken, Air Fryer Buffalo Chicken Thighs, or Air Fryer Buffalo Chicken Bites depending on what works best for you.

This is the kind of dinner that comes in handy when you want big buffalo flavor without making buffalo wings. You can build the bowls with rice, cauliflower rice, or lettuce, then finish them with crunchy vegetables, blue cheese crumbles, and your favorite dressing. They’re great for meal prep, easy to adjust, and a nice change of pace when you want something different from Buffalo Chicken Tacos, a Buffalo Chicken Wrap, or Buffalo Chicken Stuffed Peppers.

Why You’ll Love This Recipe

  • Big buffalo flavor without frying: You get that spicy, tangy buffalo flavor in a dinner that feels much easier than making wings.
  • Easy to customize: Use rice, cauliflower rice, or greens, then add the toppings and dressing you like best.
  • Great for meal prep: The chicken and bowl ingredients can be prepped ahead so lunch or dinner comes together fast.
  • A good way to switch up buffalo chicken dinners: If you already make recipes like Buffalo Chicken Tacos, Buffalo Chicken Wrap, or Buffalo Chicken Stuffed Peppers, this gives you another easy way to use those same flavors.

Ingredients You’ll Need

These buffalo chicken bowls use simple ingredients that are easy to turn into a filling lunch or dinner. Grab the exact amounts from the recipe card below.

For the buffalo chicken

  • Chicken breasts or chicken thighs: Use raw boneless skinless chicken breasts or thighs cut into bite-sized pieces. Chicken thighs stay a little juicier, while chicken breasts are a leaner option.
  • Olive oil: Helps the seasonings coat the chicken and helps it cook well in the skillet.
  • Garlic powder, smoked paprika, onion powder, salt, and black pepper: These simple spices add flavor under the buffalo sauce.
  • Buffalo sauce: Since this is the main flavor in the bowl, use a buffalo sauce you already know you like.

For the bowls

  • Cooked rice: White rice, brown rice, or jasmine rice all work well. You can also use cauliflower rice if you want a lighter option.
  • Shredded romaine or iceberg lettuce: Adds crunch and freshness.
  • Shredded carrots, diced celery, and cherry tomatoes: These help balance the heat and add texture.
  • Blue cheese crumbles: Optional, but a great addition if you like that classic buffalo chicken pairing.
  • Ranch Dressing: A drizzle of Ranch Dressing adds a cool, creamy finish. Use your favorite bottled version or my homemade ranch dressing recipe.
  • Blue Cheese Dressing: If you prefer a more classic buffalo pairing, Blue Cheese Dressing works really well here too. Same with above, use one from the store or make my blue cheese dressing recipe.

Optional toppings

  • Avocado: Adds creaminess and helps balance the heat.
  • Green onions: Add fresh flavor at the end.
  • Crispy tortilla strips or chips: Great if you want a little extra crunch.

How to Make Buffalo Chicken Bowls

These bowls are easy to make, and once the chicken is cooked, the rest comes together quickly.

Cook the chicken

Pat the chicken dry, then toss it with olive oil, garlic powder, smoked paprika, onion powder, salt, and pepper. Cook it in a large skillet over medium heat until fully cooked and lightly golden.

Finish and serve

Drizzle with Ranch Dressing or Blue Cheese Dressing, then add blue cheese crumbles, avocado, or green onions if using.

Other Ways to Make Buffalo Chicken for Bowls

One of the best things about this recipe is how flexible it is. The bowls work with more than one kind of buffalo chicken.

  • If you want the air fryer version: Air Fryer Buffalo Chicken is a great option when you want the same flavors with a different cooking method.
  • If you want bite-sized pieces: Air Fryer Buffalo Chicken Bites work especially well for bowls because the chicken is already cut into smaller pieces.
  • If you want buffalo chicken thighs: Air Fryer Buffalo Chicken Thighs are a good option when you want something a little juicier.
  • If you want a pressure cooker option: Instant Pot Buffalo Chicken works well when you want something meal prep-friendly.

What Else You Can Make With Buffalo Chicken

If you like buffalo chicken, there are plenty of other ways to turn those same flavors into dinner.

  • Tacos: Buffalo Chicken Tacos are a great option when you want the same bold flavor in a handheld dinner.
  • Wraps: A Buffalo Chicken Wrap is a good choice for lunch or an easy grab-and-go meal.
  • Stuffed peppers: Buffalo Chicken Stuffed Peppers work well when you want a lower-carb dinner with the same flavor profile.
  • Dip: If you want something more snacky or party-friendly, Buffalo Chicken Dip is another easy way to use those same flavors.

Tips for the Best Buffalo Chicken Bowls

  • Use chicken thighs if you want extra juicy chicken: They stay tender and work especially well for meal prep.
  • Toss the chicken in sauce after cooking: This helps the sauce coat the chicken without burning in the pan.
  • Let the chicken sit for a minute before stirring: That helps it get a little color in the skillet.
  • Keep the fresh toppings separate for meal prep: This helps everything stay crisp and fresh.
  • Add the dressing when you serve it: Add Ranch Dressing or Blue Cheese Dressing right before eating so the bowls do not get soggy.

What to Put in Buffalo Chicken Bowls

Buffalo chicken bowls are easy to change up based on what you like or what you already have in the fridge.

  • Base options: Rice, cauliflower rice, chopped lettuce, or a mix of grains and greens all work well.
  • Crunchy vegetables: Celery, carrots, tomatoes, cucumbers, cabbage, and bell peppers all fit well here.
  • Creamy toppings: Avocado, blue cheese crumbles, Ranch Dressing, and Blue Cheese Dressing all help balance the heat.
  • Crunchy extras: Tortilla strips, crushed crackers, crispy chickpeas, or chopped Air Fryer Bacon or Air Fryer Turkey Bacon can add texture.

Swaps and Variations

  • Use ground chicken: Ground chicken is a budget-friendly option that cooks quickly.
  • Make it low carb: Use cauliflower rice or a lettuce base.
  • Turn it into another meal: The same buffalo chicken can also be used for Buffalo Chicken Tacos, a Buffalo Chicken Wrap, or Buffalo Chicken Stuffed Peppers.
  • Change the cheese: If blue cheese is not your favorite, try feta, cheddar, Monterey Jack, or pepper jack.
  • Add more vegetables: Cucumbers, cabbage, bell peppers, roasted broccoli, or corn all work well here.
  • Add a smoky topping: Chopped Air Fryer Bacon or Air Fryer Turkey Bacon adds crunch and extra savory flavor.

FAQs

What should I put in a buffalo chicken bowl?

Start with a base like rice, cauliflower rice, or greens, then add buffalo chicken, crunchy vegetables, and a creamy dressing like Ranch Dressing or Blue Cheese Dressing.

Do you put buffalo sauce on chicken before or after cooking?

For this recipe, it is best to cook the chicken first, then toss it with buffalo sauce while it is still hot. That helps the sauce coat the chicken without burning.

Are buffalo chicken bowls good for meal prep?

Yes. They work well for meal prep when you store the chicken, base, fresh toppings, and dressing separately until you are ready to eat.

Can I make a buffalo chicken bowl with potatoes instead of rice?

Yes. Roasted or baked potatoes make a great base if you want a heartier version of the bowl.

Storage & Reheating

  • Store: Keep the buffalo chicken, rice, and fresh toppings in separate airtight containers in the fridge for up to 4 days.
  • Freeze: The cooked buffalo chicken can be frozen, but the fresh toppings should be added later.
  • Reheat: Reheat the chicken and rice separately, then build the bowl with the cold toppings and dressing just before serving.
