Dry Rub Chicken Breasts

These dry rub chicken breasts are an easy way to use my homemade chicken dry rub for a quick dinner. The smoky, savory seasoning coats the chicken before it air fries until browned on the outside and juicy in the center.

I cook these the same way as my air fryer chicken breasts, but use the dry rub for the seasoning. You can also use the same rub on chicken breasts cooked on the grill, in the oven, or in a skillet. For dinner, try them with garlic butter rice, creamed spinach, or air fryer potato wedges.

  • Three simple ingredients: All you need are chicken breasts, oil, and my chicken dry rub.
  • Easy in the air fryer: The chicken cooks quickly, and the high heat helps the seasoning brown on the outside.
  • Good for leftovers: Serve the breasts whole for dinner, then slice any extras for salads, wraps, or bowls.

Ingredients Needed

  • Chicken breasts: Use boneless, skinless chicken breasts. If one end is much thicker than the other, pound the chicken to a more even thickness so it cooks evenly.
  • Chicken Dry Rub: I use my homemade Chicken Dry Rub for these chicken breasts. It has smoked paprika, garlic, herbs, and spices for a smoky, savory flavor with a little warmth.
  • Avocado oil: Helps the dry rub stick to the chicken and encourages browning in the air fryer. Olive oil also works.

How to Make Dry Rub Chicken Breasts in the Air Fryer

I cook these using the same basic method as my air fryer chicken breasts. The difference here is the dry rub: the oil helps the seasoning coat the chicken before it goes into the air fryer.

Even out the chicken

Pat the chicken breasts dry. If they are noticeably thicker on one end, pound them until the thickness is more even. This keeps the thinner parts from drying out before the center is done.

Coat the chicken with the dry rub

Add the chicken breasts, oil, and chicken dry rub to a bowl. Turn the chicken until the seasoning coats all sides. Press any loose rub onto the meat so it stays in place.

Arrange in the air fryer

Place the chicken breasts in the air fryer basket in a single layer with some space between them. This gives the hot air room to move around each piece.

Air fry and flip

Air fry at 400°F, flipping the chicken halfway through. The outside should look browned and evenly coated with seasoning as the chicken finishes cooking.

Check the temperature and rest

Check the thickest part with an instant-read thermometer instead of relying only on cooking time. Cook the chicken to 165°F, then let it rest for about 5 minutes before slicing.

Tips for the Best Dry Rub Chicken Breasts

  • Pat the chicken dry: This helps the oil and seasoning stick better.
  • Do not crowd the basket: Leave some space between the breasts so the hot air can circulate.
  • Check different-sized pieces separately: Smaller chicken breasts may finish before larger ones, so check each piece as it gets close to being done.

How Much Dry Rub Should I Use on Chicken Breasts?

I use about 1 to 2 tablespoons of dry rub per pound of chicken breasts. Use enough to evenly coat the chicken on all sides. My chicken dry rub already includes salt and spices, so you do not need to season the chicken separately.

How Long Should Dry Rub Sit on Chicken?

You can cook the chicken right after adding the dry rub. If you have extra time, season it earlier and keep it covered in the refrigerator until you are ready to cook. One thing I really love about using dry rub on chicken breast is that sitting is completely optional.

Other Dry Rubs for Air Fryer Chicken

I use my chicken dry rub for this recipe, but you can use the same air fryer method with other dry rubs too. Try:

  • Jerk seasoning for warm spices and heat.
  • Shawarma seasoning for warm, aromatic spices.
  • Rotisserie chicken seasoning for a savory, classic chicken flavor.
  • Cajun seasoning for a peppery, slightly spicy option.
  • BBQ seasoning for smoky, slightly sweet chicken.

Blackened seasoning is a little different. It still tastes good in the air fryer, but blackened chicken gets that dark, seasoned crust from a very hot skillet. If that is what you are after, use my blackened chicken recipe instead.

How Do You Keep Dry Rub Chicken Breasts Juicy?

Chicken breasts are lean, so the biggest thing is not overcooking them.

  • Use enough dry rub: My chicken dry rub already includes salt along with the spices, so the recommended amount seasons the chicken while it cooks.
  • Check the temperature: Use an instant-read thermometer in the thickest part instead of relying only on time. The chicken should reach 165°F.
  • Take it out when it is done: Leaving the chicken in the hot air fryer can keep cooking it and dry it out.
  • Let it rest: Give the chicken about 5 minutes before slicing so more of the juices stay in the meat.
  • Brine if you want: I do not brine the chicken for this recipe, but brining can help lean meat stay moist. I use that method with recipes like my pressure cooker turkey breast.

Pounding thicker chicken breasts to a more even thickness also helps the center and edges cook at about the same rate.

  • Dry rub chicken wings are a good choice when you want seasoned wings with crisp edges.

  • Air fryer chicken thighs use the same chicken dry rub with juicy dark meat instead of chicken breasts.

What to Serve with Dry Rub Chicken Breasts

These chicken breasts are easy to build into different kinds of dinners:

  • Rice or pasta: Serve them with garlic butter rice or lemon orzo pasta.
  • Potatoes and vegetables: Add air fryer potato wedges, or make creamed spinach on the stovetop while the chicken cooks.
  • A lighter plate: Pair the chicken with cauliflower mushroom risotto, sautéed green beans, or slice it and use it in my Chicken Cobb Salad.

Leftovers also work well in rice bowls or wraps for lunch the next day.

Storage and Leftovers

  • Store: Keep leftover chicken breasts in an airtight container in the refrigerator for up to 4 days.
  • Reheat: Warm the chicken gently in the microwave or air fryer just until heated through so it does not dry out.

Ingredients

  • 1 lb Chicken Breasts, boneless, skinless
  • 2 tbsp Best Chicken Dry Rub Seasoning, click for recipe
  • 2 tbsp Avocado oil, or olive oil

Instructions

  • Prep the chicken: Pat the chicken breasts dry. If needed, pound the thicker ends so the breasts are more even in thickness.
  • Add the dry rub: Place the chicken breasts in a large bowl or zip-top bag. Add the chicken dry rub and oil, then toss until the chicken is evenly coated on all sides.
  • Air fry: Place the chicken breasts in the air fryer basket in a single layer with space between them. Air fry at 400°F for 6–8 minutes.
  • Flip and finish: Flip the chicken and cook for another 6–8 minutes, or until the thickest part reaches 165°F. Smaller chicken breasts may finish sooner.
  • Rest: Remove the chicken from the air fryer and let it rest for about 5 minutes before slicing.
