Keto Orange Muffins with Orange Chocolate Glaze

Every once in a while, I decide to get a bit fancy and have a cute dessert with tea! This month is National Hot Tea Month so I was excited to partner with Bigelow to create a recipe inspired by tea.

For me, Bigelow is one of the most recognizable American tea brands. My mom often kept our home stocked with their Green Tea, Green Tea with Lemon, and Cozy Chamomile. As an adult, Bigelow has become my go-to for tea because of their high-quality ingredients and foil packaging, which keep each cup tasting fresh.

This month, Bigelow is celebrating National Hot Tea Month by sharing videos (like this ingredient video for Constant Comment) and hosting giveaways on Facebook and Instagram. These Keto Orange Muffins with Orange Chocolate Glaze were inspired by Bigelow’s Constant Comment tea.

Bigelow Constant Comment Tea is a blend of black tea, the rind of oranges, sweet spices, and other natural flavors. The orange and sweet spice flavors pair perfectly with these Keto Orange Muffins.

I decided to add a Keto Orange Chocolate Glaze because I was hoping to make the cake version of those chocolate covered oranges that come wrapped up in foil! You can absolutely omit the glaze if you’d like.

Where do you get Constant Comment?

You can pick up Bigelow Tea, including Constant Comment, from most stores in the Coffee and Tea aisle. I picked this one up at my local Walmart. As you can see, Bigelow has a wide range of options!

What’s so special about black tea?

I drink Constant Comment sometimes as an alternative to coffee because it has caffeine. Black Tea, like Green Tea, is also packed with antioxidants that are thought to be linked to a slew of health benefits so it seems like a win for keeping me warm and having things that are good for me!

According to my Bigelow box, black tea has more caffeine than green tea and less caffeine than coffee. For me, this is perfect when I just want a small caffeine boost.

Can you have oranges (and orange muffins) on keto?

I’ve mentioned before that keto is about achieving ketosis and not necessarily about a specific food. However, there are some foods that (in normal servings) can kick us out of ketosis so we limit or avoid them.

For me, oranges are one of the things that I limit while on keto because each serving has about 12g net carbs. Even though these carbs are naturally occurring, I always remember that they are still sugar.

With that in mind, this recipe uses an all-natural orange extract. This way, it still has the orange flavor that you’re looking for in an orange muffin. But, you can enjoy these without having to worry about whether or not one muffin will knock you out of ketosis.

What are some variations to this recipe?

I intentionally kept these muffins “plain” so that this recipe might be a starter of sorts to other keto orange muffins. Some keto-friendly add-ins are:

  • Nuts: Almonds, Pecans, Walnuts
  • Sugar-Free Chocolate Chips
  • Dried Cranberries (No Sugar Added)
  • Unsweetened Shredded Coconut Flakes

If you choose to include any of these, I’d fold in a 1/3 cup into the batter before baking. Be mindful, though, that these will change the macros by adding calories and carbs.

Another option would be to use some of these lightly as toppings after putting on the orange chocolate glaze. I included unsweetened coconut flakes, some orange rind shavings, and a drizzle of sugar-free syrup.

Ingredients

Cake Dry Ingredients

  • 3/4 cups Almond Flour
  • 2 tbsp Coconut Flour
  • 1/2 tbsp Baking Powder
  • 1/2 tsp Xanthan Gum
  • 1/4 tsp Natural Ancient Sea Salt
  • 1/4 tsp Ground Cinnamon
  • 1/2 cup Granular Sweetener

Cake Wet Ingredients

  • 1/4 cup Butter, softened
  • 1/4 cup Sour Cream
  • 2 oz Cream Cheese, softened
  • 2 tsp orange extract
  • 1/2 tsp Vanilla Extract
  • 2 large Eggs

Orange Chocolate Glaze

  • 1 oz 100% Unsweetened Dark Chocolate
  • 1 tbsp Butter
  • 1/4 tsp orange extract
  • 2 tbsp Powdered Sweetener
  • 1/2 tbsp Organic Heavy Whipping Cream

Instructions

  • Preheat your oven to 350 degrees
  • Mix the dry ingredients and set aside
  • Mix the wet ingredients
  • Fold in dry ingredients using a spatula
  • Bake for 18-20 minutes or until a toothpick comes out clean
  • Put chocolate and butter in a small microwave safe bowl
  • Microwave the chocolate and butter on medium for 30 seconds. Stir. Repeat for 1-2 more times until the chocolate and butter are fully incorporated.
  • Add the powdered erythritol and orange extract
  • Stir and drizzle over the muffins
  • Allow 5 minutes for the chocolate to set
