These steak bites and potatoes cook together in one skillet with crispy golden potatoes and tender, seared steak bites. Finished with garlic, butter, and rosemary, it’s a cozy dinner that feels a little special but comes together in about 35 minutes.

Juicy steak bites and roasted potatoes with a rich blue cheese drizzle

This steak bites and potatoes recipe is all about contrast: crispy potatoes with caramelized edges and juicy steak bites seared in a hot skillet. A little garlic butter and fresh herbs bring everything together, while optional blue cheese adds a rich, salty finish.

If you enjoy quick skillet steak dinners, you might also like my steak bites, surf and turf, steak quesadilla, steak tacos, or try finishing the steak with chimichurri sauce or herb garlic butter for steak for extra flavor.

Why These Are the Best Steak Bites and Potatoes

These garlic butter steak bites and potatoes work because they combine a few simple techniques that build flavor quickly.

  • One skillet meal: Everything cooks in the same pan, making cleanup easy.
  • Perfect texture contrast: Crispy potatoes and tender steak bites balance each other in every bite.
  • Fast dinner: This steak bites and potatoes recipe is ready in about 35 minutes.
  • Easy flavor upgrades: Add parmesan herb garlic butter, chimichurri, or steak seasoning (in place of salt and pepper) to change the flavor profile.
ingredients to make steak bites and potatoes

Ingredients You’ll Need

This recipe uses simple ingredients that cook quickly in a hot skillet. Exact measurements are in the recipe card below.

  • Sirloin steak: Cut into bite-size pieces. Sirloin works well because it’s tender and cooks quickly.
  • Baby Yukon gold potatoes: Halved so they cook evenly and develop crispy edges.
  • Olive oil or avocado oil: Helps the potatoes and steak brown in the skillet.
  • Butter: Adds rich flavor and helps the potatoes crisp. You can also use garlic butter for steak for extra garlic, parmesan, and herb flavor, or Cajun butter for a Cajun-inspired twist.
  • Garlic cloves: Fresh garlic adds bold flavor at the end of cooking.
  • Fresh rosemary: Adds a subtle herb flavor that pairs well with steak.
  • Salt
  • Black pepper
  • Blue cheese (optional): Adds a salty, creamy finish when sprinkled on warm steak and potatoes.
  • Fresh parsley (optional): Adds color and freshness before serving.

How to Make Steak Bites and Potatoes

This garlic butter steak bites with potatoes recipe comes together quickly in a cast-iron skillet. Here’s a visual guide for how to make it.

Cook the Potatoes

Heat oil in a large skillet over medium heat. Add the halved potatoes cut-side down and season with salt, pepper, and rosemary. Cook until golden and fork-tender, stirring occasionally. Add butter during the last few minutes so the potatoes crisp and develop more flavor. Transfer the potatoes to a plate.

Sear the Steak Bites

Pat the steak pieces dry so they brown properly. Increase the heat to medium-high and add the remaining oil to the skillet. Place the steak bites in a single layer and season with salt and pepper. Sear until browned on the outside but still tender inside.

Add the Garlic

During the last 30 seconds of cooking, add the minced garlic and stir quickly so it becomes fragrant without burning.

Bring Everything Together

Return the potatoes to the skillet and gently toss with the steak bites. Sprinkle blue cheese over the top while everything is still warm so it softens slightly. Finish with parsley and serve straight from the skillet.

Best Steak for Steak Bites and Potatoes

The best steak for steak bites with potatoes is one that cooks quickly and stays tender when cut into small pieces. Good options include:

  • Sirloin steak: A great balance of tenderness and flavor.
  • Strip steak: Slightly richer with more marbling.
  • Ribeye: Very flavorful but a little richer.

Cut the steak into evenly sized pieces so the steak bites cook at the same rate.

Steak Bite Cooking Tip

For the best flavor in this steak bites and potatoes recipe, cook the steak quickly in a hot skillet so it develops a browned crust while staying tender inside. If you want a full guide to cooking steak bites, including the best cuts of steak and searing techniques, see my steak bites recipe, where I walk through the process step by step.

Pro Tips for the Best Garlic Butter Steak Bites and Potatoes

  • Let steak sit at room temperature briefly: This helps it sear better.
  • Don’t overcrowd the pan: Give the steak space so it browns instead of steaming.
  • Let the crust form: Avoid stirring too soon while the steak sears.
  • Add garlic at the end: Garlic burns quickly, so add it during the last seconds of cooking.
  • Add blue cheese last: This lets it soften without melting completely.
  • Adjust the salt and pepper to taste: since blue cheese has a salty finish, you can adjust the salt and pepper to taste after adding the blue cheese.

What to Serve With Steak Bites and Potatoes

These steak bites and potatoes are filling enough to be a full meal, but they also pair well with simple sides. Try serving them with:

  • Cauliflower mash
  • Creamed spinach
  • Air fryer mushrooms
  • Air fryer asparagus
  • Sautéed Green Beans with Garlic
  • Air Fryer Green Beans Recipe

Storage and Reheating

  • Store: Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Freeze: Freezing is not recommended because the potatoes can become soft.
  • Reheat: Reheat in a skillet over medium heat for the best texture. Avoid microwaving too long since steak can become tough.

Substitutions and Variations

  • Swap blue cheese for goat cheese for a milder flavor.
  • Add sautéed mushrooms for extra texture.
  • Drizzle with balsamic glaze before serving.
  • Add crushed red pepper for heat.
  • Use homemade steak seasoning instead of salt and pepper for more flavor.

Recommended Equipment

Cast Iron Skillet

Ingredients

  • 1 lb Sirloin Steak, cut into bite-sized pieces
  • 12 oz baby Yukon gold potatoes, halved
  • 2 tbsp Olive Oil, or avocado oil
  • 2 tbsp Butter, unsalted
  • 3 cloves Garlic, minced
  • 1 tsp Rosemary, fresh
  • 1 tsp Natural Ancient Sea Salt, divided, or more to taste after the blue cheese is added
  • ½ tsp Black Pepper, divided, or more to taste after the blue cheese is added
  • ⅓ cup Blue Cheese crumbles, adds a salty flavor so you can decide whether you would like more salt and pepper after incorporating it
  • parsley, fresh, optional for garnish

Instructions

For the Potatoes:

  • Heat 1 tablespoon of oil in your cast-iron skillet over medium heat.
  • Add halved potatoes cut-side down. Season generously with half of the salt (½ tsp), half of the pepper (¼ tsp), and rosemary.
  • Cook for 10-12 minutes, stirring occasionally, until golden and fork-tender.
  • Add 1 tablespoon of butter during the last few minutes for extra crispiness and flavor. Remove potatoes from the skillet and set aside.

For the Steak Bites:

  • Pat the steak pieces dry (this helps create that caramelized crust). Increase the heat to medium-high. Add remaining oil to the skillet.
  • Place steak bites in the skillet in a single layer. Don’t overcrowd the pan. Work in batches if needed. Season with the remaining salt and pepper.
  • Sear the steak bites: Sear for 2-3 minutes, turning occasionally, until browned on the outside but still tender on the inside.
  • Add garlic during the last 30 seconds, stirring quickly so it doesn’t burn. Remove from heat.

Finish the Dish:

  • Return the potatoes to the skillet and gently toss them with the steak bites.
  • Stir in the blue cheese: Sprinkle blue cheese over the top while everything is still warm so it softens slightly.
  • Adjust the salt and pepper to taste.
  • Finish with fresh parsley for a little color.
