Ingredients Needed
- Almond Flour: I’m using superfine blanched almond flour
- Butter: I’m using salted butter in this recipe instead of adding salt to the batter
- Keto Sweetener: To keep this brownie recipe keto-friendly, I’m using an all-natural substitute for sugar. I’ve used the granular variety.
- Eggs: I’m using large eggs. You can swap 4 large eggs for 5 medium eggs if needed
- Xanthan Gum: this helps to bind the recipe and is used in so many great Xanthan Gum recipes
- Cocoa Powder: I’m using the unsweetened type.
- Sugar-free Chocolate Chips: I prefer milk chocolate chips in brownies. You can get keto-friendly versions at the market or online.
- Walnuts: these are unsalted pieces. You can buy them as pieces or use a knife and a cutting board or a food processor to cut them into pieces yourself.

- Mix the dry ingredients in a bowl
- Mix the wet ingredients in a bowl
- Fold the wet ingredients and dry ingredients together with a mixing spatula

- Store in the refrigerator or freezer: these can be stored in the refrigerator or the freezer. But, you should serve these at room temperature or microwave them for a few seconds after storing

Yes, but the substitute is not one to one. So, when you substitute almond flour for regular flour, be sure to find a recipe that was tested with almond flour.
Can you substitute ground almonds for flour in brownies?
Yes – this recipe uses blanched almonds ground into a superfine meal. I personally buy this from the store, but you could also make almond flour.

I’m using superfine, blanched almond flour. This recipe was not tested with almonds that have the skins on it. I don’t use it because I find that it changes the color and texture.

Ingredients
Dry Ingredients
- 1 cup Super Fine Almond Flour (Bob’s Red Mill)
- ⅓ cup Unsweetened Cocoa Powder
- ¾ cup Granular Sweetener, powdered or granular work
- ¼ tsp Xanthan Gum (Bob's Red Mill)
- 1 tsp Baking Powder (Bob’s Red Mill)
Wet Ingredients
- 4 large Eggs, I prefer and use brown eggs, at room temperature
- ½ cup Butter, salted and softened
- 1 tsp vanilla extract
Add-ons
- ⅓ cup walnuts, chopped pieces
- ⅓ cup Sugar-free Milk Chocolate Chips, optional
Instructions
- Preheat the oven to 350 degrees
- Mix the dry ingredients in a bowl
- Mix the wet ingredients in a bowl
- Add the dry ingredients to the wet ingredients. Use a spatula or standmixer on stir to combine.
- Add the batter to a square baking dish. Top with the add-ons
- Bake for 20-22 minutes, or until the center of the brownies can be poked with a toothpick and comes out clean.
- Remove from the oven and allow to cool the brownies to cool for 5-10 minutes before handling
