If I were asked to make a list of essential food for keto then bacon and avocados would be near the top of my list. Bacon is simply delicious and makes everything taste better. Avocados are filled with healthy fats.
Since BLTs are one of my favorite lunch sandwiches, I decided to make a BLT with Avocado in salad form! This salad is pretty awesome! It has nearly all of the flavors of your traditional BLT, plus the extra creaminess of the avocado.
What dressing do you use for BLT Avocado salad?
In this recipe, I’m using a homemade ranch dressing. As you know, I am a fan of homemade dressing. In fact, I share two other recipes for dressing on this site: Creamy Caesar Dressing and the Blue Cheese Dressing that I used in Air Fryer Buffalo Wings. Homemade dressings are easy to make and usually just require you to dump in all of the ingredients and blend. The ranch dressing used in this salad is also super easy and quick to make.
What greens do you use for this salad?
I’m using spring mix because that’s what I had on hand. However, this salad would also taste great with romaine lettuce.
How do you cook the bacon?
One of the easiest hacks for cooking bacon is to use a cooling rack lined baking sheet. If you’re sick of bacon popping on you, a greasy mess on your stovetop, then cook your bacon in the oven.
I used this cooling rack and it fit perfectly in my baking sheet. All I do is preheat my oven to 425 degrees, put the slices of bacon of the rack, and pop them in the oven for 15 minutes.
What if I don’t eat pork or bacon?
If you don’t eat pork, then you should use turkey bacon in this recipe. Another option is to omit bacon completely and have this salad with chicken. I’d recommend having this salad with 4-Spice Chicken Breast as an alternative.
Ingredients
- 5 oz Spring Mix
Salad Mix-ins
- 6 slices Sugar-free Bacon cooked
- 2 tbsp red onions diced
- 10 cherry tomatoes sliced in half
- 2 ripe avocados
- 2 tbsp blue cheese crumbles optional
Ranch Dressing
- 2 tbsp mayo
- 2 tbsp sour cream
- 1/2 tbsp lemon juice
- 1.5 tsp ranch seasoning
Instructions
- Preheat your oven to 425 degrees
- Add the baking to a cooling rack lined baking sheet and cook for 15 minutes
- While the bacon is cooking, mix all of the ingredients for the ranch dressing
- Allow the bacon to cool for at least 5 minutes and assemble the salad
