Just because you’ve gone keto or decided to cut sugar doesn’t mean you can’t have your favorite sweet treats. One of my very favorites is strawberry cheesecake, which includes a low-carb cheesecake with strawberry sauce as a topping. In this post, I share how to make a strawberry sauce that tastes like the sweet sauce we’re used to without adding sugar.
Ingredients in Strawberry Sauce
My strawberry sauce recipe is super easy. In fact, it requires less than five ingredients. I use frozen strawberries available at most grocery stores. This helps cut down on prep time since I don’t have to wash or cut the stems off the strawberries.
In addition to the strawberries, you’ll need Granular Monk Fruit Erythritol for some added sweetness. You’ll also need lemon juice to help preserve flavor and prevent browning. Xanthan Gum helps thicken the sauce.
How to Make Strawberry Sauce
To make great tasting strawberry sauce at home, you need a medium-sized saucepan. Set your burner to medium-low heat. Add all the ingredients to the saucepan and give it a stir.
Once you’ve added the ingredients to the saucepan, cook the sauce for 10 to 15 minutes. The sauce will thicken as it cools, so don’t worry if the sauce is a bit runny at the end.
If you are using fresh strawberries, you will want to thoroughly clean them and chop off their stems prior to cooking the sauce. Otherwise, follow the same instructions.
Use this to make Strawberry Sauce for Cheesecake
This strawberry topping goes great on cheesecake. If you use my strawberry topping for cheesecake, first make sure the cake has cooled. A cooled cheesecake is sturdy enough to hold the sauce.
Besides that, you should also make sure the sauce is cooled. That generally takes about 15 additional minutes. You can top your cheesecake with the sauce on top. Alternatively, you can store the cheesecake and sauce separately in the refrigerator, then top the cheesecakes with the sauce when you are ready to serve them.
Strawberry Topping for Pancakes & Waffles
You can make the strawberry topping ahead of time and store it in the fridge. If you prefer a warmer topping, you can heat it for a few seconds in the microwave before using it on your pancakes or waffles. Or you can make it fresh and serve to order.
Make Strawberry Shortcake
You can use the strawberry sauce to make strawberry shortcake too. Strawberry shortcake is easy to make and you will only need:
- keto pound cake or egg loaf french toast sticks
- This strawberry sauce or fresh strawberries
- homemade cool whip
To make strawberry shortcake using my strawberry sauce, gather a few small cake pans or parfait bowls. Then, make alternating layers of cake, strawberry sauce, and whipped cream. I typically top the strawberry shortcake with a layer of whipped cream and may place a slice of strawberry on top for garnish.
Use any 1:1 sugar substitute
My strawberry topping or sauce is keto-friendly and low-carb. It is also gluten-free.
I’m using a 1:1 substitute for sugar, but you can use any sugar substitute you prefer.
Swap fresh for frozen berries
My recipe calls for frozen strawberries because I find them easier to work with. But you can use fresh strawberries if you prefer.
Swap strawberries for blueberries or raspberries
Finally, if you prefer a different berry, you can follow the same steps but substitute a different berry altogether. - Add the strawberries, lemon juice, and sweetener to a saucepan. Cook on medium until the strawberries defrost.
- Add the Xanthan gum to the pan and continue to cook until a syrup forms. Xanthan gum serves as a thickener and cooks quickly so keep an eye on it. Remove the pan from the heat.
- Allow the sauce to cool. You can use it to top the cheesecakes, waffles or pancakes.
