- Ground chicken: I use dark meat ground chicken. At my grocery store, this is 93% lean ground chicken. This recipe works best with the highest fat content available since the fat helps to keep the chicken meatballs from drying out.
- Almond flour: I used blanched and superfine almond flour. This is a gluten-free and keto-friendly substitute for breadcrumbs.
- Egg: I use a large egg for this recipe.
- Ranch Seasoning: I use my ranch seasoning recipe or pick one up from the market.
- Grated Parmesan: I get this from the refrigerated section of the market.
- Mayonnaise: your favorite full-fat mayo will work
Homemade Buffalo Sauce
Whether you’re making buffalo chicken wings or these meatballs, you only need two ingredients for buffalo sauce.
- Frank’s Red Hot: this is a cayenne pepper hot sauce. I love it over other brands because it also has ingredients like garlic powder, which gives it some added flavor.
- Butter: I prefer unsalted and melted
How To Make Low-Carb Buffalo Chicken Meatballs
- Add spices, mayo, egg, almond flour, and Parmesan cheese to a large mixing bowl. Whisk (or use a fork) to combine (it will look like a paste). Add the ground chicken to the bowl. Use a rubber spatula or hands with gloves to mix to combine.
- Form 14 meatballs (using a meatball scooper or round tbsp measuring spoon – about 1.5 tbsp per meatball).
- Preheat the air fryer for 5 min at 400 degrees. Line the air fryer with parchment paper for easy clean-up. Place the meatballs in the air fryer basket in a single layer. Spray the meatballs generously with oil spray. Air fry the meatballs for 6 minutes. Spray again and air fry for 6 more minutes.
- Add the cooked meatballs to a serving dish or bowl. Mix the ingredients for the buffalo sauce in a bowl. Pour it on top of the cooked meatballs. Top with diced green onions, blue cheese crumbles, etc.
