This Keto Strawberry Sauce recipe (Sugar-free Strawberry Sauce) uses just four ingredients and is ready in 15 minutes. Use it as the perfect sugar-free strawberry topping for low-carb cheesecake and keto pancakes.

There are so many reasons to love this sugar-free strawberry sauce recipe. Here are my top three:

- Easy recipe: simply add the ingredients to a saucepan, heat, and stir occasionally. It’s ready in less than 15 minutes.
- No added sugar: whether you are looking for a strawberry compote, low carb strawberry sauce or strawberry sauce without sugar, this easy recipe has you covered.
Ingredients Needed
This easy strawberry sauce uses basic ingredients. Here is what you’ll need to gather:
- Strawberries: I use frozen strawberries available in the freezer section at my local grocery store. I prefer these because they taste great even when it’s not strawberry season. Plus, using frozen strawberries helps cut down on prep time since I don’t have to wash or cut the stems off. You can use fresh strawberries though if you wish.
- Keto Sweetener: I’m using Granular Monk Fruit Erythritol for some added sweetness. But, you can use any sugar substitute or keto-friendly sweetener that you prefer.
- Lemon Juice: to help preserve flavor and prevent browning
- Xanthan Gum helps give the sauce a thicker consistency.

How to Make Keto Strawberry Sauce
To make delicious strawberry sauce at home, you need a medium-sized saucepan.
Set your burner to low-medium heat. This prevents the ingredients from sticking to or burning at the bottom of the pan
Add all the ingredients to the saucepan and give it a stir.
Once you’ve added the ingredients to the saucepan, cook the sauce for 10 to 15 minutes. The sauce will thicken as it cools, so don’t worry if the sauce is a bit runny at the end.
Strawberry Sauce for Keto Cheesecake
This strawberry topping goes great on regular-sized and mini cheesecakes. If you use my strawberry topping for cheesecake, first make sure the cake has cooled. A cooled cheesecake is sturdy enough to hold the sauce.
Besides that, you should also make sure the sauce is at or close to room temperature too. That generally takes about 15 additional minutes.
You can top your cheesecake with the sauce on top. Alternatively, you can store the cheesecake and sauce separately in the refrigerator, then top the cheesecakes with the sauce when you are ready to serve them.
Strawberry Topping for Pancakes & Waffles
This easy keto dessert sauce is actually the perfect way to give your pancakes and waffles extra strawberry flavor. It is a great substitute for sugary syrups or other toppings that may contain added carbs.
You can make the strawberry topping ahead of time and store it in the fridge. If you prefer a warmer topping, you can heat it for a few seconds in the microwave before using it on your pancakes or waffles. Or you can make it fresh and serve to order.
Make Strawberry Shortcake
You can use the strawberry sauce to make a low-carb strawberry shortcake too. Strawberry shortcake is easy to make and you will only need:
- keto pound cake or egg loaf french toast sticks
- This strawberry sauce or fresh strawberries
- homemade cool whip
To make strawberry shortcake using my strawberry sauce, gather a few small cake pans or parfait bowls. Then, make alternating layers of cake, strawberry sauce, and whipped cream. I typically top the strawberry shortcake with a layer of whipped cream and may place a slice of strawberry on top for garnish.
Top Cooking Tips & Recipe FAQs
- Use any 1:1 sugar substitute: My strawberry topping or sauce is keto-friendly and low-carb. It is also gluten-free. I’m using a 1:1 substitute for sugar, but you can use any sugar substitute you prefer.
- Swap strawberries for blueberries or raspberries: If you prefer a different berry, you can follow the same steps but substitute a different berry altogether. For example, you can make sugar-free blueberry sauce and keto raspberry sauce.
- Mix the Xanthan Gum with a small amount of a neutral-tasting oil like melted coconut oil to reduce clumping.
- Add more sweetener to taste
Storage and Leftovers
Store your sugar-free sauce in an airtight container in the refrigerator. When I make keto strawberry cheesecake, I store this fruity sauce separately.
After I let the cheesecake cool and when I’m ready to serve it, I top the entire cheesecake with the sauce.
Can you use fresh strawberries?
My quick strawberry sauce calls for frozen strawberries because I find them easier to work with. But, you can use fresh strawberries if you prefer.
If you are using fresh strawberries, you will want to thoroughly clean them and chop off their stems prior to cooking the sauce. Otherwise, follow the same instructions.
Keep Strawberries Whole or Blend
You can use a hand blender if you wish after cooking the sauce to reduce the strawberry chunks or make a strawberry puree. I personally prefer the large strawberries and keep them whole.

- 1 cup Strawberries, I used frozen, but you could use fresh
- 2 tbsp Granular Sweetener, or more to taste
- 1 tbsp Lemon Juice
- 1/2 tsp Xanthan Gum
Instructions
- Add the strawberries, lemon juice, and sweetener to a saucepan. Cook on medium until the strawberries defrost.
- Add the Xanthan gum to the pan and continue to cook until a syrup forms. Xanthan gum serves as a thickener and cooks quickly so keep an eye on it. Remove the pan from the heat.
- Allow the sauce to cool. You can use it to top the cheesecakes, waffles or pancakes.
