I enjoy peanut butter regularly. However, I always opt for unsweetened. If you are sensitive to peanut butter, you can swap it for any of these keto-friendly nut butter options.

Making keto mousse is simple no matter the flavor you choose. You can use the picture below to see the process step-by-step.

One thing that makes the mousse creamier is to start with softened cream cheese. Not only is it easier to blend, but it also prevents lumps and clumps in the final result.

Substitutions & Variations

You can balance the sweet flavors of this keto mousse with salty bites of chopped peanuts. Instead of caramel extract, feel free to add vanilla extract if that is what you have.

Add ½ tablespoon of unsweetened cocoa powder for a chocolate peanut butter version. It would also be delicious to throw some chopped keto peanut butter cups on top.

I have not tried this recipe with dried peanut butter, but I use powdered cocoa in the chocolate version of this recipe. When using dried ingredients, I find that you can add about one tablespoon. But, you can always add more to taste for richer peanut butter flavor.

Ingredients

  • 4 oz cream cheese, softened
  • ¼ cup Powdered Sweetener
  • 2 tbsp Peanut Butter, creamy, unsweetened
  • ½ cup heavy cream
  • 1 tsp caramel extract, you can also use vanilla extract

Instructions

  • Add the cream cheese to a stand mixer. Mix on high until smooth (about 2 minutes)
  • Add all of the remaining ingredients
  • Mix until stiff peaks form, about 2 minutes on high
