As I explained in my original Keto French Toast Stick recipe, I was missing French Toast so I remixed the egg loaf recipe that was all over Instagram. I remixed the recipe because I wasn't a fan of the "soggy" french toast texture. This is a variation to my remix recipe includes the most amazing keto-friendly toppings: Sugar-free Whipped Cream as well as Keto Strawberry Compote (which I thickened with Unflavored Multi-Collagen powder)!!! Since this recipe is filled with yummy toppings, I skipped the syrup. I also added the nutrition facts by item since you could decide to skip certain parts. I calculated the nutrition facts by plugging them into MyFitnessPal.
Easy Sweet Egg Loaf
6 large eggs
6 oz of cream cheese, softened
3 tbsp of butter or ghee, melted
2 tsp vanilla extract
1/2 tsp baking powder
This makes 4 servings. Each serving has about 380 calories, 33g of fat, 2 net carbs, and 14g of protein.
French Toast Sticks
~2 tbsp of butter for pan frying
Keto Cinnamon Sugar for topping (see note below)
Keto Strawberry Compote
1 cup frozen strawberries
1 tbsp lemon juice
This makes about 4 servings of Strawberry Compote. Each serving has no added sugar, 2g net carbs, 20 calories, and 0 grams of fat.
Keto Whipped Cream
This makes about 4 servings of Keto Whipped Cream. Each serving has no added sugar, 0g net carbs, 100 calories, and 10 grams of fat.

Preheat your oven to 350 degrees
Add all ingredients for the Easy Sweet Egg Loaf to a stand-mixer and beat until smooth (it will look like cake batter).
Add the batter to a greased loaf pan (I sprayed coconut oil in my 360 Cookware Loaf Pan)
Bake for 40 minutes then allow it to cool
While the loaf is baking, make the Strawberry Compote by adding all of the ingredients to a saucepan
Heat the ingredients on medium-low, until they form a syrup (~10 minutes)
All of the ingredients for the Keto Whipped Cream to a stand-mixer and whip on medium to high until a stiff peak forms
To make the French Toast sticks, heat a skillet to medium heat
Slice the Easy Sweet Egg Loaf into 16 slices
Toast both sides of slices in butter
Top with additional Cinnamon Sugar, Whipped Cream, and Strawberry Compote
