These crispy oven baked chicken wings have golden, crunchy skin with juicy meat inside, without breading or deep frying. A little baking powder helps the skin crisp in the oven, while a simple seasoning blend gives the wings plenty of flavor.

These oven-fried chicken wings are easy enough for dinner and great for game day or parties. For a soul food-style meal, serve them with Southern Baked Mac and Cheese, Collard Greens with Bacon, Southern Candied Yams, or Homemade Cornbread.   • Simple ingredients: You only need chicken wings, baking powder, and a handful of pantry seasonings.
  • Easy to customize: Enjoy them as-is or add Buffalo sauce, garlic Parmesan sauce, BBQ sauce, or another favorite.

Ingredients Needed

Here are a few notes about the main ingredients. Check the recipe card below for the exact amounts.

  • Chicken wings: Use wings that have been separated into flats and drums.
  • Sea salt and black pepper: I prefer freshly ground black pepper.
  • Smoked paprika: Adds color and a mild smoky flavor.
  • Garlic powder and onion powder: Season the wings without adding moisture to the skin.
  • Baking powder: This helps the skin brown and crisp in the oven by changing its surface pH. Be sure to use baking powder, not baking soda.

How to Make Crispy Chicken Wings in the Oven

Dry and season the wings

Pat the chicken wings very dry, then toss them with the salt, pepper, smoked paprika, garlic powder, onion powder, and baking powder until the skin is evenly coated.

Arrange them with space

Place the wings on a parchment-lined baking sheet or a baking sheet fitted with a wire rack. Leave space between each piece so the wings can brown and crisp instead of steaming.

Bake until browned and crispy

Bake at 425°F for 25 minutes, flip the wings, then bake for about 25 minutes more. The skin should look browned and crisp when they’re done. Let the wings rest for about 5 minutes before serving.

How Long to Bake Chicken Wings at 425°F

For this recipe, bake the chicken wings at 425°F for about 50 minutes total, flipping after the first 25 minutes. The skin should look browned and crisp when they’re ready. Since wing size can vary, larger pieces may need a little more time.

Tips for Crispy Oven Baked Chicken Wings

  • Use baking powder, not baking soda: They aren’t interchangeable. Baking soda can leave an unpleasant flavor.
  • Don’t crowd the pan: If the wings won’t fit with space between them, use a second baking sheet.
  • Use the appearance along with the time: Wing size varies, so look for browned, crisp skin rather than relying only on the clock.

Sauce Ideas

These crispy baked wings are an easy base for different flavors. Serve them plain with Ranch Dressing or Blue Cheese Dressing, or toss them with Buffalo sauce, garlic Parmesan sauce, BBQ sauce, or another favorite.

What to Serve With Oven Baked Chicken Wings

For a Southern or soul food-style dinner, serve these wings with Southern Baked Mac and Cheese, Collard Greens with Bacon, Southern Candied Yams, or Homemade Cornbread.

For game day, add Air Fryer Fries with Ranch Dressing or Blue Cheese Dressing. For another simple side, try Air Fryer Green Beans or Vinegar Coleslaw.

Storage and Reheating

  • Refrigerate: Store leftover wings in an airtight container for up to 4 days.
  • Reheat: Warm refrigerated wings in a 350°F oven for about 15 minutes, or until heated through. This gives you the best chance of bringing back some of the crisp texture.
  • Freeze: You can freeze cooked wings in an airtight container for up to 3 months, but freezing and reheating softens the skin, so they won’t be as crispy as freshly baked wings. Thaw them overnight in the refrigerator before reheating.

Ingredients

Chicken Wings

  • 1.5 lbs Chicken Wings, sectioned into flats and drums
  • 1/4 tsp Natural Ancient Sea Salt, Use DRDAVINAHS for 15% off
  • 1/2 tsp Black Pepper
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1 tbsp Baking Powder, you cannot swap baking soda

Instructions

  • Preheat the oven to 425 degrees.
  • Remove the chicken wings from the refrigerator and pat dry (removing as much moisture as possible helps to have a crispy wing skin).
  • Mix the sea salt, black pepper, smoked paprika, garlic powder, onion powder and baking powder in a small dish or ramekin.
  • Sprinkle the seasoning mixture on the wings and toss the wings to coat.
  • Place wings on a parchment-paper lined baking sheet or a baking sheet with a cooling rack.
  • Cook the wings in the oven for 25 minutes per side.

    I made these wings tonight fo dinner. I chose this recipe because:
    a – they are low cab
    b – they only require basic ingredients that I already have or won’t have a problem finding in any grocery store
    c – I wanted an oven cooked recipe so that I wouldn’t have to make several small batches in an air fryer.
    These were amazing!! Better than any restaurant by far. I’m so impressed. It’s the first time I’ve ever used baking powder in chicken wing seasoning but it makes all the difference. These wings were so crispy on the outside and fall off the bone inside, and perfect combination of spices. I already know that I’m jotting this one down and putting it in the recipe box where I keep all the best ones!

      Such a good question! The baking powder works because of the chicken skin. I think a little would be helpful for the fat cap on the pork chop. But, I haven’t tested that. I have tested this recipe for air fryer pork chops. Thanks also for your review of the wings. – Davinah

    I always try to follow a recipe exactly the first time I make it. These were great! Super easy, tasty and crunchy. And if you use parchment paper, clean up is easy. (I love parchment paper!) Next time I’ll have to buy three pounds of wings so there will be leftovers!

      Yes double the spices and use two baking sheets. Since the oven will technically be full, they may need some additional cook time, depending on how hot your oven runs. Thank you for asking, Shawnda!

      I haven’t tested this combo, but you’re the second person to ask about it and it really does sound delicious. I know that the baking powder would help with the fat cap on a pork chop, but I’m not sure what it would do to the rest of the meat that’s a bit leaner. I’ll test it out and report back.     Hello, your recipe for the crispy chicken wings calls for 1 tablespoon baking powder, all other call for 1 teaspoon, is the tablespoon a typo because such a different amount.

    I am a chicken wing snob and make very good wings! But these were fantastic! Best I’ve ever had, including eating out! They were crispy and crunchy, which we love.     I made these wings last night. They were delicious! Family loved them. They were crispy and had a lot of flavor. Followed the recipe except made a different sauce. For the sauce I did 1/3 cup of Franks Hot Sauce and approximately 2/3 cup of honey, garlic powder, and a slab of butter. Brought it almost to a boil then took it off the heat to cool for a couple of minutes. Then poured it over the wings.

    These didn’t turn out very well. I should have stuck to my original recipe. The baking powder made it gooey and dusty and bitter tasting. I made sure I used baking powder and not baking soda.

      Thanks so much for stopping back to share your experience. Some tips: to prevent the wings from being gooey, it’s important that you pat them dry first. Drying the wings helps the spice mix to spread evenly and also helps from having clumps of baking powder (baking powder is naturally bitter) and since you mentioned that the wings were gooey, I imagine that you also had clumps of it on your wings. Before cooking the chicken, they should look similar to the photo with a light, even coating of the spice mix on the wings.

    Tastiest crispy wing recipe I have ever tasted! I can eat a chicken wing just about every way but my 91 year old father insists on crispy wings. These were the perfect fit!     I’ve used this recipe for chicken wings at least a dozen times and they’re perfect, each and every time! I will occasionally add other seasonings like cayenne or Italian seasoning, but my very favourite is to toss in a teaspoon or two of lemon pepper – outstanding!
    Any idea what the baking time would be if I were to cut chicken breasts into wing sized pieces?

    OMG Davinah, these wings were AWESOME!!! I came across your website while googling for oven baked wings and these were out of this world!! I made them last night for the Super Bowl and was so sad that I only made 1 1/2 pounds. My husband and I could have kept on eating them.     These are the bomb! They are crispy but not fried. I make them every week now! Love it!! My husband, the wing connoisseur, loves them too.
    The only thing I changed was the timing…25 minutes per side was too much and the first time I made them, they were *almost* inedible. Since then, I do 25 minutes, flip, 15 minutes, which makes them perfecto!

    I make these all the time. I put the seasoning in a big plastic bag, dry the wings, and then shake! I use a cookie rack thing so I don’t even turn them over. Just wanted to thank you for giving me a recipe that made me actually LIKE chicken wings! I have done with full wings and it’s just as good, btw. Thank you so much! Love your site.

    Family loved them. Kids picked bones clean and had seconds. I used paper and my oven cooks hot so I should have done 90 mins. Usually I cook them in the air fryer but these were way crisper and more loved.

      Thanks for asking. The cook time is correct for crispy wings. You can always adjust the cook time, though. I recommend cooking these for 25 minutes, flipping them, and then checking on them after 10 minutes to see how much longer works for you!

    I call my husband “Birdman” because he loves anything chicken/turkey/goose/quail. But his absolute favorite is wings. I have been making wings for him for 50 years but when I tried this recipe he became rapturous! The only change I made was to marinate them in buttermilk for 6 hours before prepping them for the oven. Tender, juicy, flavorful, and very satisfying. Thanks for a great recipe.

    I have tried umpteen wing recipes, just deleted every one on my Pinterest page except this one!
    They were everything I hoped they would be.
    Follow the directions, don’t change a thing.
    Didn’t use a rack, just parchment paper, easy clean up.
    I made Franks Keto buffalo sauce, put on after baking , stuck them back in the oven for a couple minutes.
    They’ll be perfect for our Super Bowl Party!

      I haven’t tried this, but I imagine that this will be similar to making the wings in an air fryer. In that recipe, I use 400 degrees and cook the wings for 12-15 minutes per side.

    Update! I’ve made these twice. The first time I baked them as is. Last night I broiled them and they were even more crispy. First, I let them sit out on a baking sheet fitted with a wired rack so they could come to room temp and dry more thoroughly without wasting paper towels to dry them.

    I coated them and them put them under the broiler on high for about 10 minutes. You will have to watch them because paprika will burn under high heat. Turn the broiler down to low and broil turning them every 10 minutes until cooked through. The wired rack allows for more air circulation and more even cooking. I’d suggest baking them using a wired rack as well.

          No. The fish could use a breading like the one I used for Bang Bang Shrimp and I’d recommend that you pan fry that with a little olive, avocado or coconut oil. I’ll work on a recipe for that.

    Tried these and they are very tasty, you go, girl! I was looking up a different way to make wings and found this. Mine didn’t bake up VERY crispy but I was still very happy with the results. Loved the taste and will make these again.

    I usually don’t go for the trendy stuff like keto, etc. but the combo of ingredients plus the addition of baking powder intrigued me and had to try it.

    These wings were awesome! The only downside was that when I went to turn them over some of the skin stuck to the pan. Do you think I could use parchment paper – would they remain crispy?

    I want to try to make these but my husband likes his wings cooked with a buffalo sauce. Do you have a variation that you can add a sauce during baking ?

      Hi Lisa, 

      I always add my sauce to wings at the end of cooking because I want them saucy and slightly crispy. Here’s my recipe for Buffalo Wings with homemade blue cheese. You can feel free to omit the ghost pepper spice (we like our food insanely hot!). You’ll notice that I’m using an air fryer. You can use the oven directions to bake them before adding sauce.

    Today is the second time in the past 2 weeks I have prepared this wings recipe and it is so easy and very good! My husband loves them and so do I. Great taste and the crispness I love in wings. I’ll fix them like this all the time now! Thanks for the secret ingredient!
