Learn how to make creamy roasted cauliflower soup without cream using one of my favorite, easy low carb soup recipes. It’s great for anyone trying to cut carbs and calories while still enjoying what they eat. This recipe starts with my air fryer roasted cauliflower which takes less than 15 minutes to prepare and uses my lemon butter garlic sauce for fresh bright flavor.

- Cauliflower: I buy these pre-cut and packed to save time, but you can cut a whole cauliflower into florets to make this soup too.
- Olive oil
- 24 Herbs sprinkle seasoning: This is a salt-free herb seasoning blend that adds flavors like garlic, tarragon, and rosemary in one bottle.
- Natural ancient sea salt
- Black pepper
- Lemon butter sauce: this easy recipe takes less than 10 minutes to make and can be used in this soup, but also in my lemon garlic butter baked shrimp and lemon garlic butter baked salmon.
- Chicken broth: this adds flavor, but you can also use chicken bone broth to add protein
- Mascarpone or Softened Cream Cheese: You can add creaminess without cream
How To Make Creamy Cauliflower Soup Without Cream
- Drizzle the cauliflower with olive oil, herb seasoning, sea salt, and black pepper.
- Roast the seasoned cauliflower florets in the air fryer at 400 degrees for 12-15 minutes. You can toss them midway through and check for browning and softening at the 12-minute mark.
- Make the lemon garlic butter sauce.
- Make the soup by adding the roasted cauliflower, broth, mascarpone, and lemon garlic butter sauce to a blender. Use the blender’s soup setting to incorporate.

- Use the air fryer to save time: If you have an air fryer, use it here. Air frying cauliflower florets takes about 15 minutes, and that’s half the time you’ll use with the traditional oven.
- Save some cauliflower florets for garnishing: When mixing the cauliflower with the rest of the ingredients to make the soup, spare a few florets to garnish the soup as you serve.
My roasted cauliflower soup isn’t runny. But, if you want more thickness and don’t mind the carbs, use cornstarch or flour. For keto or low-carb options, xanthan gum is a perfect thickener. I use it to thicken my keto tomato soup.
Cauliflower soup can stay in the fridge for 3-5 days before going bad.

- 2 tbsp Olive Oil
- 1 tsp 24 Herbs Sprinkle Seasoning (Salt-free)

- 1/4 tsp Black Pepper
- 1/4 cup Lemon Butter Garlic Sauce, melted, click for recipe
- 2 cups Chicken Bone Broth
- 2 tbsp Mascarpone Cheese, or softened cream cheese
Instructions
Roast the Cauliflower in the Ninja Foodi Air Fryer
- Add the cauliflower florets to a large bowl.
- Drizzle the cauliflower with the olive oil, herb seasoning, sea salt and black pepper.
- Add them to the air fryer basket.
- Roast them in the air fryer at 400 degrees for 12-15 minutes.
Make Soup
- Save a few pieces of roasted cauliflower for garnish.
- Add the remaining roasted cauliflower, broth, mascarpone, and lemon garlic butter sauce to a blender.
- Use the soup setting to blend to incorporate. I personally only needed about 40 seconds of the time, but you can check and stop when it’s creamy.
- Serve the soup in bowls. Top with garnishes.
