I had a taste for a non-sweet breakfast. For me, this means that instead of having Keto Pancakes or French Toast, I wanted creamy grits, sunny-side up eggs, and bacon. The only problem with that breakfast is the grits! As you know, grits are grains and packed with carbs so eating them would mean that I’d be knocked out of ketosis. This recipe for Easy Cheese Cauliflower Grits is my keto-friendly remake to cheese grits. Cauliflower Rice is a substitute for the grits, making this low-carb and keto-friendly. I’d recommend these Cheese Cauliflower Grits with an egg and bacon for breakfast. You could also make pair it with Sweet & Spicy Shrimp for dinner!
- Heat a skillet to medium-low heat
- Add heavy cream, chicken stock, cream cheese, butter, salt, black pepper, cheddar cheese, and chives to the pan. Whisk together until cream cheese is melted (~5 minutes)
- Add cauliflower rice to the pan and cook in sauce until tender (~10 minutes was enough for me, but I'd check at 5 minute intervals).
