These crispy oven baked chicken wings have all the flavor and crunch of deep-fried wings, but they’re so much easier and healthier. They take less than an hour to make, and will be a hit with the whole family.

A plate of wings with a garnish of parsley and a ramekin of ranch

Wings are one of the best foods in the world, and there’s a spot at my table for every chicken wing preparation out there. But most wings are deep-fried, which is unhealthy, a lot of work, and let’s be honest: a lot of mess. And unfortunately, a lot of oven baked wing recipes lack the satisfying flavor and crunch that we all know and love about fried wings. But not these crispy oven baked chicken wings. They’re just as crispy as fried wings, and taste every bit as good.

The secret? These wings use baking powder, which helps the wings get super crispy. Serve these to your family or to friends at a party, and no one will believe that they were made in an oven!

Why Make Crispy Oven Baked Chicken Wings?

These wings are some of my favorites, and you’ll love them for a few reasons.

  • They’re so easy. There are only 7 ingredients in these wings … and chicken, salt, and pepper make up 3 of those ingredients! They take less than an hour to make, and very little work on your end.
  • They’re SO crispy. Ready for science class? The baking powder in this recipe raises the pH level of the chicken skin. That allows the protein in the chicken skin to break down more easily, which makes it crisp up more. A little baking powder will easily give your oven baked wings the perfect crunch of a fried wing.
  • They’re cheap. Wings are among the cheapest cuts of meat that you can find. And the only other ingredients in this recipe are highly affordable pantry staples that you probably already have. You can make a whole plate of these delicious wings for only a few bucks.

Ingredients Needed

Here are all the ingredients that you need to make these easy, healthy, and delicious wings. Make sure to check out the recipe card at the bottom of the article to see the exact amounts for each ingredient.

  • Chicken wings – The wings should be cut into flats and drums, rather than cooked whole.
  • Sea salt
  • Black pepper – For best results, use freshly-ground black pepper.
  • Smoked paprika
  • Garlic powder
  • Onion powder
  • Baking powder – It’s very important that you use baking powder and not baking soda in this recipe.

How to Make Crispy Oven Baked Chicken Wings

Here’s how to make this super easy recipe. It takes less than an hour to have crispy and juicy chicken on the table!

  • Prep. Preheat your oven to 425F.
  • Dry the wings. Pat the chicken wings with a paper towel or kitchen towel to dry them off.
  • Make the seasoning. Add the salt, pepper, paprika, garlic, onion, and baking powder to a bowl, and stir to combine.
  • Season the wings. Put the spice blend on the wings, and toss until they’re well coated.
  • Bake. Place the wings on a baking sheet that has either a wire rack or parchment paper on it. Put the baking sheet in the oven for 25 minutes, then flip the wings over, and bake for 25 more minutes.
Four numbered pictures: first, a bowl of seasoning with a spoon in it, next to a tray of raw chicken wings; second, a spoon sprinkling seasoning over a dish of raw chicken wings; third a dish full of seasoned, raw chicken wings; and fourth, 15 seasoned, raw chicken wings on a baking sheet with parchment paper.

Tricks and Tips

Here are some of my favorite tips for making sure these juicy oven baked chicken wings come out perfectly each time.

  • Season from up high. When adding the spice rub to the chicken, sprinkle it onto the wings from a good height. This allows the seasoning to more evenly cover the chicken. If you put all the spices in one place and then toss in the bowl, the seasoning won’t be as well distributed.
  • Don’t crowd the meat. Make sure that the chicken wings are not touching each other when they’re on the baking sheet. You want them to have space between them, so that they can crisp up properly. If you have more wings than will fit on the baking sheet without crowding, then use a second baking sheet, or cook in batches.
  • Rest. After removing the chicken wings from the oven, let them rest for at least 5 minutes before eating. This allows the meat to reabsorb all of its juices, so that the wings will be extra tender and juicy. Don’t worry, they’ll still be piping hot after those 5 minutes!

Serving Suggestions

There are two things that I like to do when eating these oven baked chicken wings: serve them with some tasty sides, and give them an irresistible sauce to dip them in. Here are a few sides that I love to serve with these wings:

  • Creamed Spinach
  • Air Fryer Green Beans
  • Keto Coleslaw
  • Cauliflower Mac and Cheese
  • Roasted Garlic Cauliflower
  • Cauliflower Mash and Keto Gravy
  • Roasted Cauliflower and Brussel Sprouts

And here are some of my favorite sauces for dipping these crispy, tender wings into.

  • Blue Cheese Dressing
  • Ranch Dressing
  • Buffalo Wing Sauce
  • Garlic Parmesan Wing Sauce

How to Store and Reheat Leftovers

These wings will last in the fridge for up to 4 days, as long as you store them in an airtight container. To reheat them, place in a 350F oven for about 15 minutes.

Can I Freeze This Recipe?

Definitely! If you want to make your crispy oven baked chicken wings last even longer, then place them in an airtight container in the freezer for up to 3 months. Thaw overnight in the fridge before reheating.

I’m a NY food snob. And what’s worse is I have celiacs disease which makes me a cranky food snob. Once I found gluten free spices, I made these wings. I had all but given up on good wings as gluten free ingredients suckola!
Alas! An excellent wing was to be had! These are easy and delicious, so glad I stumbled onto this recipe. Thank you!!

I am a chicken wing snob and make very good wings! But these were fantastic! Best I’ve ever had, including eating out! They were crispy and crunchy, which we love. I substituted the black pepper with red, as we like some spice. Thank you so much for this delicious recipe and technique with the baking soda!

I made these wings last night. They were delicious! Family loved them. They were crispy and had a lot of flavor. Followed the recipe except made a different sauce. For the sauce I did 1/3 cup of Franks Hot Sauce and approximately 2/3 cup of honey, garlic powder, and a slab of butter. Brought it almost to a boil then took it off the heat to cool for a couple of minutes. Then poured it over the wings.

These didn’t turn out very well. I should have stuck to my original recipe. The baking powder made it gooey and dusty and bitter tasting. I made sure I used baking powder and not baking soda.

Thanks so much for stopping back to share your experience. Some tips: to prevent the wings from being gooey, it’s important that you pat them dry first. Drying the wings helps the spice mix to spread evenly and also helps from having clumps of baking powder (baking powder is naturally bitter) and since you mentioned that the wings were gooey, I imagine that you also had clumps of it on your wings. Before cooking the chicken, they should look similar to the photo with a light, even coating of the spice mix on the wings.

I’ve used this recipe for chicken wings at least a dozen times and they’re perfect, each and every time! I will occasionally add other seasonings like cayenne or Italian seasoning, but my very favourite is to toss in a teaspoon or two of lemon pepper – outstanding!
Any idea what the baking time would be if I were to cut chicken breasts into wing sized pieces?
    Thank you!

The only thing I changed was the timing…25 minutes per side was too much and the first time I made them, they were *almost* inedible. Since then, I do 25 minutes, flip, 15 minutes, which makes them perfecto!
    Thank you for this recipe!

yes, third time making. crispy juicy perfection. why would you do anything else? but for smaller wings, less time, esp second side.

I make these all the time. I put the seasoning in a big plastic bag, dry the wings, and then shake! I use a cookie rack thing so I don’t even turn them over. Just wanted to thank you for giving me a recipe that made me actually LIKE chicken wings! I have done with full wings and it’s just as good, btw. Thank you so much! Love your site.

Family loved them. Kids picked bones clean and had seconds. I used paper and my oven cooks hot so I should have done 90 mins. Usually I cook them in the air fryer but these were way crisper and more loved.

      Hi Kristie,

Thanks for asking. The cook time is correct for crispy wings. You can always adjust the cook time, though. I recommend cooking these for 25 minutes, flipping them, and then checking on them after 10 minutes to see how much longer works for you!

I call my husband “Birdman” because he loves anything chicken/turkey/goose/quail. But his absolute favorite is wings. I have been making wings for him for 50 years but when I tried this recipe he became rapturous! The only change I made was to marinate them in buttermilk for 6 hours before prepping them for the oven. Tender, juicy, flavorful, and very satisfying. Thanks for a great recipe.

Follow the directions, don’t change a thing.
Didn’t use a rack, just parchment paper, easy clean up.
I made Franks Keto buffalo sauce, put on after baking , stuck them back in the oven for a couple minutes.

I haven’t tried this, but I imagine that this will be similar to making the wings in an air fryer. In that recipe, I use 400 degrees and cook the wings for 12-15 minutes per side.

Update! I’ve made these twice. The first time I baked them as is. Last night I broiled them and they were even more crispy. First, I let them sit out on a baking sheet fitted with a wired rack so they could come to room temp and dry more thoroughly without wasting paper towels to dry them.

I coated them and them put them under the broiler on high for about 10 minutes. You will have to watch them because paprika will burn under high heat. Turn the broiler down to low and broil turning them every 10 minutes until cooked through. The wired rack allows for more air circulation and more even cooking. I’d suggest baking them using a wired rack as well.

Thanks again for a great recipe!

No. The fish could use a breading like the one I used for Bang Bang Shrimp and I’d recommend that you pan fry that with a little olive, avocado or coconut oil. I’ll work on a recipe for that.

I usually don’t go for the trendy stuff like keto, etc. but the combo of ingredients plus the addition of baking powder intrigued me and had to try it.

Omg just started this Keto thing and I must say this is one of the best recipes I’ve tried. The whole family enjoyed them. Will definitely be my weekend dinners moving forward.

      Hi Vanessa!

I’m so happy that you enjoyed these! They are some of my favorites too! Love mixing them up with different sauces and pairing them with new veggies to have some variety!

I want to try to make these but my husband likes his wings cooked with a buffalo sauce. Do you have a variation that you can add a sauce during baking ?

      Hi Lisa,

I always add my sauce to wings at the end of cooking because I want them saucy and slightly crispy. Here’s my recipe for Buffalo Wings with homemade blue cheese. You can feel free to omit the ghost pepper spice (we like our food insanely hot!). You’ll notice that I’m using an air fryer. You can use the oven directions to bake them before adding sauce.

      Thanks,
      Davinah

Today is the second time in the past 2 weeks I have prepared this wings recipe and it is so easy and very good! My husband loves them and so do I. Great taste and the crispness I love in wings. I’ll fix them like this all the time now! Thanks for the secret ingredient!
