This recipe uses a store-brought keto bread, which is low in carbs and a keto sweetener instead of regular sugar. - Large eggs
- Organic heavy whipping cream: Replaces regular milk to cut carbs and give a familiar rich taste.
- Vanilla extract
- Keto cinnamon sugar
- Sola bread: A low-carb swap for brioche. You can also use your favorite low carb bread options like Aldi Keto Bread or Franz.
- Butter: Salted to balance the sweet flavors

- Softened cream cheese
- Granular keto sweetener
- Vanilla extract
- Lemon juice
- Blueberries
How To Make Cream Cheese Stuffed French Toast
- Whisk the heavy cream, eggs, and keto cinnamon sugar in a bowl. Set aside.
- Mix the berry filling ingredients: cream cheese, sweetener, vanilla extract, and lemon juice in another bowl, then fold in the berries.
- Make three sandwiches by laying the cream cheese mixture between the slices of bread. Dip the sandwiches in the milk and egg mixture and set aside.
- Cook the stuffed french toast for about 3 minutes per side (or until they brown). Top with more keto cinnamon sugar or honest maple sugar.

- Use fresh or frozen blueberries: For frozen blueberries, thaw them first. I microwaved mine for 15 seconds.
- Cook on medium-low heat: Unlike regular bread, keto bread will burn if the temperatures are too high.

- Use organic heavy whipping cream instead of regular milk: To cut added sugars and carbs and give the keto toast a rich flavor.
Don’t add too much milk, and cook on moderate heat to avoid searing the outside cooked while the inside is still undone. Also, use sturdy slices of bread instead of thin and flimsy ones.

- 6 slices Low Carb Bread

Blueberry Cream Cheese Filling
- 4 oz Cream Cheese, softened
- 1 tbsp Granular Sweetener
- 1 tsp Vanilla Extract
- 1/2 tsp Lemon Juice
- 1/4 cup blueberries, I used frozen and microwaved them for 15 seconds
Instructions
- Whisk the heavy cream, eggs, and keto cinnamon sugar in a bowl. Set aside.
- Mix the berry filling ingredients in another bowl: cream cheese, sweetener, vanilla extract, and lemon juice in another bowl. Fold in the berries.
- Make three sandwiches by laying the cream cheese mixture between the slices of bread
- Dip the sandwiches in the milk and egg mixture. Set aside.
- Heat a medium frying pan to medium-low heat – keto breads will burn if the temperature is too high. It’s best to cook these lower than your typical french toast.
- Add 1 tbsp of salted butter to the pan per batch – I tend to cook these two at a time in a traditional griddle skillet
- Cook the stuffed french toast for about 3 minutes per side (or until they are brown).
- Top with more keto cinnamon sugar, sugar free whipped cream, or Honest Syrup.
