Take your keto french toast to the next level using my stuffed french toast with cream cheese recipe. The results are as delicious as the original stuffed French toast minus the extra carbs. This recipe uses a store-brought keto bread, which is low in carbs and a keto sweetener instead of regular sugar. In this post, I’ll share how to make healthy stuffed French toast and tips for keeping carbs low.

Why Make This?

  • Keto-friendly: Unlike the regular stuffed french toast that uses high-carb brioche bread and sugar, this recipe uses low-carb sola bread and a keto sweetener. The regular toast has 47g net carbs, while my healthy stuffed French toast has 11g net carbs.
  • Easy and Quick: My blueberry stuffed French toast is easy to make and uses simple ingredients. Mixing the ingredients and cooking the stuffed sandwiches takes less than 30 minutes.

Ingredients Needed

Keto Stuffed French Toast

  • Large eggs
  • Organic heavy whipping cream: Replaces regular milk to cut carbs and give a familiar rich taste.
  • Vanilla extract
  • Keto cinnamon sugar
  • Sola bread: A low-carb swap for brioche. You can also use your favorite low carb bread options like Aldi Keto Bread or Franz.
  • Butter: Salted to balance the sweet flavors

Berry Filling

  • Softened cream cheese
  • Granular keto sweetener
  • Vanilla extract
  • Lemon juice
  • Blueberries

How To Make Cream Cheese Stuffed French Toast

  1. Whisk the heavy cream, eggs, and keto cinnamon sugar in a bowl. Set aside.
  2. Mix the berry filling ingredients: cream cheese, sweetener, vanilla extract, and lemon juice in another bowl, then fold in the berries.
  3. Make three sandwiches by laying the cream cheese mixture between the slices of bread. Dip the sandwiches in the milk and egg mixture and set aside.
  4. Cook the stuffed french toast for about 3 minutes per side (or until they brown). Top with more keto cinnamon sugar or honest maple sugar.

Recipe Tips & FAQs

  • Use fresh or frozen blueberries: For frozen blueberries, thaw them first. I microwaved mine for 15 seconds.
  • Cook on medium-low heat: Unlike regular bread, keto bread will burn if the temperatures are too high. 
  • Add keto sugar or sugar-free maple syrup: To keep the carbs low.
  • Use organic heavy whipping cream instead of regular milk: To cut added sugars and carbs and give the keto toast a rich flavor.
How to keep stuffed French toast from getting soggy?

Don’t add too much milk, and cook on moderate heat to avoid searing the outside cooked while the inside is still undone. Also, use sturdy slices of bread instead of thin and flimsy ones.

What is the best bread for French toast?

The top best bread choices for French toast are Brioche, Challa, French Baguette, Croissant, and Stale bread. However, all these traditional options are carb-loaded, so if you want to make a healthier French toast, use a keto option like sola bread.

Can you use heavy cream instead of milk for French toast?

Yes. My stuffed French toast recipe uses heavy whipping cream to keep the carbs low.

Low Carb Healthy Stuffed French Toast

This easy Healthy Stuffed French Toast recipe is perfect if you're cutting carbs. Uses your favorite low carb or keto bread. Plus, swaps regular sugar for a natural sugar substitute in the blueberry cream cheese filling.

Ingredients

  • 2 large Eggs
  • 1/4 cup Organic Heavy Whipping Cream
  • 1 tsp Vanilla Extract
  • 1 tbsp keto cinnamon sugar
  • 6 slices Low Carb Bread
  • Salted Butter, for cooking

Blueberry Cream Cheese Filling

  • 4 oz Cream Cheese, softened
  • 1 tbsp Granular Sweetener
  • 1 tsp Vanilla Extract
  • 1/2 tsp Lemon Juice
  • 1/4 cup blueberries, I used frozen and microwaved them for 15 seconds

Instructions

  • Whisk the heavy cream, eggs, and keto cinnamon sugar in a bowl. Set aside.
  • Mix the berry filling ingredients in another bowl: cream cheese, sweetener, vanilla extract, and lemon juice in another bowl. Fold in the berries.
  • Make three sandwiches by laying the cream cheese mixture between the slices of bread
  • Dip the sandwiches in the milk and egg mixture. Set aside.
  • Heat a medium frying pan to medium-low heat – keto breads will burn if the temperature is too high. It’s best to cook these lower than your typical french toast.
  • Add 1 tbsp of salted butter to the pan per batch – I tend to cook these two at a time in a traditional griddle skillet
  • Cook the stuffed french toast for about 3 minutes per side (or until they are brown).
  • Top with more keto cinnamon sugar, sugar free whipped cream, or Honest Syrup.

This recipe has about 11g net carb. The final carb count will depend on the low carb or keto bread that you use.
