This Low Carb Cream Cheese Stuffed French Toast recipe tastes just like the real thing without using refined sugar. It includes a blueberry cream cheese filling and a keto-friendly sugar replacement to get the same sweetness we’re all used to without the guilt. In this post, I share how to make Low Carb Stuffed French Toast using Sola Bread. This dish is perfect for those who want to have brunch treats, but need to cut carbs and refined sugar.
Stuffed French Toast was one of the keys to my husband’s heart. A few months after we started dating, I prepared a version of this for him and things got serious quickly!
I’ll admit, my husband is a foodie, but he loves this dish so much because it takes regular French toast to ANOTHER level. It has a sweet cream cheese filling and berries sandwiched inside of french toast. The only problem is that it also often has 65g of carbs or more (yikes!)!
Even though, I found a way to make french toast while on keto, I was not about to add a cream cheese filling to the top. The version I first tested was a modified egg loaf and that already had enough cream cheese in the batter to not need a filling.
It was only after I got the chance to try and touch Sola Bread that I knew I’d be bringing Stuffed French Toast back into our lives in a way that was low carb and keto-friendly!
How to make Low Carb Stuffed French Toast
Making Low Carb Cream Cheese Stuffed French Toast is actually very similar to the regular version.
You simply make the filling. Mine includes cream cheese, a sugar substitute, vanilla, and berries.
After the filling, you create sandwiches with the filling in the center of two slices of bread. I always choose to cut my sandwiches in half.
Next, you make the cinnamon sugar egg mixture and dip your cream cheese filled sandwiches in it.
To finish the French Toast, you simply brown both sides in a pan. I cook mine until the bread gets toasty, a few minutes per side.
What is Sola Bread?
As I mentioned, I’m using Sola Bread in this recipe. Sola has a line of keto-friendly and low carb products, including sugar replacement, bread, ice cream, yogurt, granola, and bars. Their line of bread has three flavors: Golden (White) Wheat, Deliciously Seed, and Sweet Oat.
All of the bread has 4g of net carbs or less and 80 calories or less. In this recipe, I used Sweet Oat. Each slice of Sweet Oat has 70 calories and 3g net carbs.
How does Sola bread compare to regular bread?
One of the most shocking things about Sola bread is that it had the same texture as regular bread. I’ve been able to try a few low carb and keto bread options since starting keto and all of them could easily be described as “good bread for keto or low carb”. What I love about this particular brand is that it could simply be summed up as good bread, regardless.
Compared to other options, I will say that it has more carbs. But, for me, those extra are worth it because when I want to have bread, I’d prefer to have bread and not something that just looks like it.

What are good low carb and keto-friendly toppings for Stuffed French Toast?
There are a lot of options for keto-friendly toppings. You could use:
- Fresh berries
- Sugar-free syrup
- Sugar-free whipped cream
- A quick berry compote (like the one that I used for these Keto Lemon Blueberry Cheesecake Bites)
Do I even need toppings?
This dish tastes perfectly wonderful without any toppings. So, you can feel free to omit them if you wish.
I’m not keto, can I still make this?
I believe that reducing carbs and sugar is a great option for anyone. If you enjoy stuffed french toast but would like to have it in a way that has less guilt, then you should give this recipe a try.
My husband who loves regular Stuffed French Toast, always asks for this dish and even commented that it tasted better than the traditional options that we can get at local restaurants.
What kind of sweetener do you use?
I used Sola Sweetener in this recipe. Each serving has 1g net carb. It measures exactly like regular sugar so I kept the same measurements as I did when I made this before keto.
If you don’t have Sola Sweetener, then you should use whatever granular, keto sugar replacement you have on hand.
Cream Cheese Stuffed French Toast Filling
Like the traditional recipe, I stuffed this with a sweetened cream cheese filling and berries. If you don’t have berries, then you can substitute your favorite sugar-free jam.
One of the keys to this filling is to make sure that your cream cheese is softened. This allows the filling to glide easily on the bread.
You can soften cream cheese by placing it in a microwave safe bowl and heating it for 15 seconds. This method is way safer than my old method of just letting the cream cheese sit on the counter!
How many net carbs does this dish have?

These sandwiches are quite filling so it’s possible to have a half of a sandwich per person.

Low Carb Stuffed French Toast

Ingredients
- 2 large Eggs
- 1/4 cup Organic Heavy Whipping Cream
- 1 tsp Vanilla Extract
- 1 tbsp keto cinnamon sugar
- 6 slices Sola bread
- 4 oz Cream Cheese, softened
- 1 tbsp sola sweetener
- 1 tsp Vanilla Extract
- 1/2 tsp Lemon Juice
- 1/4 cup blueberries, I used frozen and microwaved them for 15 seconds
- Salted Butter for cooking
Instructions
- Whisk the heavy cream, eggs, and keto cinnamon sugar in a bowl. Set aside.
- Mix the cream cheese, Sola Sweetener, vanilla extract, and lemon juice in another bowl. Fold in the berries.
- Make three sandwiches by laying the cream cheese mixture between the slices of bread
- Dip the sandwiches in the milk and egg mixture. Set aside.
- Heat a medium frying pan to medium heat
- Add 3 tbsp of salted butter to the pan
- Cook the stuffed french toast for about 3 minutes per side (or until they are brown). Top with more keto cinnamon sugar or Honest Syrup.
